Have you ever wondered what to cook when having special guests for dinner or lunch? What an emblem!!! Well I am going to help you to prepare a beautiful dinner.

As a starter you will offer:

Aperitif: Fish flying cocktail

For one serving

50 ml Gin

25 ml Brandy orange

25 ml Peach liquor

Lime juice

Soda water

Put all the ingredients into a shaker full of ice. Strain it and serve it in a Martini glass.

Salt and Chilli Fried Squid:

For 4 people: 8 small squids

Buy at the Fish market or wherever you shop some small squids, pull off the head, it comes out quite easily, take off the skin and then get rid the cartilage found in the inside.

Cut them in rings and leave them into water with some pieces of lemons until you are going to cook them. They must be served as soon as they are cooked.

In a plate add some flour, salt and chilli flakes take the rings of squid and floured them and then deep fry them in a pan with hot oil. They take max ten minutes to cook. Drain them with some napkins any excessive oil. Season them with some more salt. Serve them with some lettuce leaves and lemon wedges. Serve them hot.

As a Main course:

Risotto alla Pescatora

Ingredients for 4 people:

320 grams of Arborio rice or pre-cooked rice, ½ kg mussels, ½ kg clams, ½ shrimp, ½ squid, 250 ml fish stock, 200 ml white wine, 1 clove of garlic, extra virgin olive oil, parsley, salt and pepper.

Start to clean the mussels with a brush and put it in a pan to cook with some water. Put the clams into salty water for one hour, and then cook them. As soon as they are ready, open them and take out the flesh, keep the cooking water. Clean the squid as explained above. Also clean the shrimps. Don’t throw any parts of the fishes as you will prepare the fish stock that you will prepare it by adding all the discards of the fishes , 1 clove of garlic, some parsley and 5 smashed cherry tomatoes.

In a pan add the garlic and olive oil; add the squid rings, shrimps and half glass of white wine. Cook for three minutes. Add the rice and toast it then add the remaining wine. Once the wine is reduced, add the fish stock, when the rice is nearly cooked add the shellfish. Add the salt and pepper.

Once ready add the chopped parsley. Serve it with a parsley leave and a lemon wedge.

Dessert Lemon Sorbet

2 organic lemons, 200 grams white sugar, 700 grams ice cubes, 1 egg white.

Grate the lemon zest, then peel the lemon making sure to get rid of the white parts and the inside filaments. Now in a blender add all the ingredients except the zest. Blend it at the maximum speed until you see it start to whisk. At this point add the ice little by little and the zest. When the ice is all crushed then will be ready. Serve it chilled. You can prepare it in advance and keep in the freezer.

Don’t forget to buy a nice bottle of white wine for the dinner. Enjoy!

very cool and I love all the white wine...I can only have German wines because I am allergic to tannins or tannic acid ...but what great recipes! love them...and i would probably replace the clams and stuff with fish and add more veggies..i would put the rind of the lemon in along with the white stuff, cause that is where all the good nutrients are, into the blender on puree and would definitely use raw sugar, but wow this is good food now....you must be a very good cook or chef...Thanks for the great article..

That is an amazing menu and I can easily adapt for vegetarians by including more veggies. Its the flavours and seasonings that have me! Oh and dont worry I will remember that nice bottle of wine :p
