Theres still a little bit of winter left; but spring is right around the corner. For North Texans, that means cookouts and outdoor get-togethers that begin and end withBBQinPlano TX. Barbecue is synonymous with Texas for a good reason we just make the best barbecue and we make sure everybody knows it. In fact, if you get off an airplane in any major airport in Texas youre likely to be hit with the smell of smoky meat and barbecue sauce from at least one of the restaurants right outside your gate. Youll be craving barbecue by the time you get to the baggage carousel.
But do we really have the bestBBQinPlano TXand the best barbecue in the country? Well, we certainly have our own style. As it turns out,
Memphis-Style
Memphis-style barbecue is pork ribs cooked two ways. The first is wet-marinated ribs that are basted during the smoking process. The other, preferred, way is ribs that are coated in dry rub that includes garlic, paprika and other spices during or after theyre cooked. They cook their pork shoulders and butts the same way. When sauce is served on the side, its tangy and tomato-based.
Carolina-Style
The two Carolinas have a slightly different take on barbecue but both revolve around the pig. North Carolinians use either the whole pig or the shoulder and butt, depending on which part of the state youre in. The meat is normally brushed with a vinegar-spice mix while cooking and is served with a tomato-based sauce. In South Carolina, the sauce of choice is mustard-based and includes brown sugar and vinegar.
Texas-Style
In Texas, we love our beef and it shows. We smoke beef brisket and ribs for hours over pecan, mesquite or oak wood so the flavor speaks for itself. Sauces tend to be less sweet and more tangy and tomato-based. East Texas barbecue offers a little different take with chopped pork and a lot of hot sauce added to the mix. If youre after a different kind of meat, we also love our sausage.
Kansas City-Style
Kansas Citys fame as a meat-packing center means that no meat is off limits. In fact, KC is a blending of the western love of beef with the southern love of pork. They cook both slowly over hickory wood with a molasses and tomato sauce on the side thats sticky and sweet. What theyre really famous for are the burnt ends of brisket cuts that have a high fat content.
