How it all started with me making breakfasts! I have been cooking breakfasts ever since I have been about 7 years old. I used to make meals for my father who was in a wheelchair.
He had taught me how to make scrambled eggs! Maybe some of you think “well, that’s pretty easy”, but to me, as a 7 year old, I was absolutely fascinated with the fact that I could make scrambled eggs, by myself!
Well, actually I didn’t just make scrambled eggs by myself for myself, it was for my sister and I when I was alone in my apartment(my parents were divorced). It was there where I learned to make many different kinds of meals, and other types of desserts, breakfast items–in which I will share later on in my blog. I will most likely have this in a different area of my website, and a separate page.
My passion for cooking has been since I was very young, like I have said, I was only about 7 years old, which makes it like 37 years ago for me. I am 44 today, and I share the same passion with making breakfasts with my kids, and I will also share with you my videos that I have done, and even some of the videos that they did without my help.
One of my all time favorites to make is Waffles. I actually got the recipe from my mom. But, I felt as though I need to modify it, and possibly make it better, and I did. I found out that by using an excellent Waffle Iron, and modifying the recipe slightly made it better. It's no major secret, but I think you'll really like it:
It’s a modified Recipe, yet so very easy to make! OK, First of All, What’s Very Important is EQUIPMENT!!
A Great Waffle Maker —notice that I didn’t mention eggs, flour, vanilla, etc. I bought mine from Amazon, it got great reviews, and I read them, and thought, I’d try it, it’s one of the BEST I’ve ever used, and it’s only $26!!:
Proctor-Silex 26500Y Durable Belgian Waffle Baker
Beaters-Electric is Preferred.
Large Steel Bowl or Ceramic Bowl
1 Tablespoon
Sifter
Measuring Cup 2-4 cup is fine.
Rubber Spatula.
Then You Will Need Fine
Ingredients!
2 Cups Bread Flour! MUCH better than regular flour, TRUST Me on this one. Or, if you don’t use plain old flour
4 eggs(I have put in 5, but that’s just me!–Really nice “eggy” flavor)
2 Tablespoons of Pure Vanilla Extract. Don’t use the Imitation Vanilla—Blaaah! Yuck!
2 Cups Whole Milk(You can use lesser Milks: 2%, 1%, no fat) But, after different experiments, I think you’ll find it worthwhile.
Chocolate Chips of your favorite choice.—Optional.
Preparation
Mix all of the ingredients into the one bowl.* I prefer to sift the flour before putting it into the bowl to make sure that all of the flour is smooth. If you skip this part of the making, it most likely won’t be end of “waffle world” but, it may take out lumps that might have been taken out. Beat ingredients with the electric beater for about 3-5 minutes or until smooth.
Plug in the Waffle Iron, and let it heat up for 5 minutes. Drizzle some oil over the iron. This will prevent the iron from sticking. Granted it is covered with You may even do this while you are making the preparation mix above*. (Make sure if this is your first time, to clean the iron with a gentle soap and sponge, then rinse with water. Dry with paper towel or other kitchen towel,)
Put about 3/4 cup of waffle batter into the iron. If you like idea of having Chocolate Waffles, then sprinkle about 2 tablespoons of chocolate chips onto the waffle batter quickly after placing the batter into the iron.
Set timer for 3 minutes.
Timer goes off, raise the waffle iron cover asap! And voila’, you have your self a perfect waffle!!
Now, if it has sticken to the iron–Don’t Worry it has happen to me! Just make sure that the Iron is well oiled for next time. Otherwise, this issue may repeat itself.

So, that’s one of the legacies that I will pass on to my children: To Know How To Cook! How To Make Great Meals, and Make Great Breakfasts! I’ll even share with you some of the recipes that I have gotten over the years, experimented how to make them even better than the original recipe. Granted, you are welcome to go back to the old recipe that may not be as good, but I believe that sometimes YOU can make it even better. That’s where creativity and imagination comes into play with food. Sometimes it’s OK to experiment with something that you haven’t done. The worse thing is that may happen is that it won’t taste as good, and you’ll have to go back to the basics once again. OR, You may come up with a classic recipe that will be much more grand than the original!
