Dinner In 20 Minutes Or Less

Sometimes getting dinner on the table after a hectic day at work can be a daunting task. It can be tempting to go through a drive-thru, pick up a bucket of chicken, a large soda and be done with it. Eating out for families a few times a week can really add up and is generally not as healthy as a home cooked meal.

So, what are your options? Why not look for a few simple dishes that takes just 10-20 minutes to prepare. Not possible! Seriously, there are a few recipes that come together in no time and can be prepared for each person according to their taste.

One dish is an omelette. An omelette is a perfect, nutritional, one dish meal anytime of the day. Everyone can get involved and even make their own. Why not set up an omelette prep. station, give family members a quick tutorial and go relax and de-stress. The possibilities are endless. You can use leftovers scattered about in the fridge and most of us keep eggs on hand. Omelettes do not have to be restaurant quality. Scrambled omelettes will be just as tasty.

A Basic Omelette

  • Three large eggs beaten
  • 1/4 cup grated cheese (your choice)
  • Salt and pepper to taste
  • 1 tbl. extra virgin olive oil
  • 1 tbl. (pat) butter (use a mixture of evoo and butter both for flavor and to prevent butter from burning)

Cooking Instructions:

  • Heat an 8-inch nonstick skillet over medium heat.
  • Beat eggs in a bowl with salt and pepper until fluffy
  • Add butter and oil to skillet tilting to coat bottom and sides evenly
  • Pour eggs in skillet and add cheese and meat/veggies.
  • Run rubber spatula around edge of skillet to ensure omelette is not sticking
  • Gently fold over with spatula (I do not recommend tossing omelette until you have a few under your belt)
  • When omelette is cooked through, slide onto a plate and enjoy.

Try Adding:

  • Mushrooms, red onions, garlic, red, yellow or green bell peppers, broccoli, squash, spinach, tomatoes, avacado
  • Try soft cheeses; cream cheese, (plain or flavored makes a smooth, creamy texture), mozarella, asaigo, harvarti, munster, goats milk cheeses, swiss, colby jack even parmesean cheese adds an interesting flavor. You can try a single cheese or a mix
  • Spicy sausage, sweet italian sausage, turkey or pork sausage, ham, leftover diced baked chicken, thin cut breakfast steak, shrimp
  • Hot or mild salsa, black beans, chilli

Experiment with different ingredients. Create your own favorite omelette list. Look for ingredients when you are at the grocery store. Enjoy an omelette at any time of the day.
