How to Make Hard Cooked Eggs for Easter

How to Make the Perfect Hard Cooked Eggs for your Easter Basket

Before you Begin:

Perfect hard cooked eggs have a soft white outside and a bright yellow yolk when you cut them open.

The most important factor in getting perfect eggs is the timing, so make sure you've got a timer handy before you begin. Cooking the eggs too long will produce a greenish/grayish ring around the yolk, still safe to eat but not very appealing to display.

Another thing to be careful of is the temperature of the water. Cooking the eggs with the heat too high will produce a rubbery white that is not very pleasant to chew. For this reason, the eggs really should be called hard cooked eggs and not hard boiled eggs because it is bad to actually hard boil eggs, they should be cooked on a very slow simmer, with just a bubble now and then in the pot.

If you've had trouble peeling your eggs in the past, you'll understand this next point. Don't start with fresh eggs, use some that are nearing their eat by date. The outer membrane of fresh eggs is tightly attached to the shell, which makes the peeling process at the end more difficult.

Instructions for making perfect hard cooked eggs:

1) Place clean eggs in a pan in a single layer.

2) Completely cover (plus an inch or two) with COLD water.

Tip: For Easter eggs, you can add food coloring to the water now for some pastel colored eggs. This also makes it easier for the rest of the family to know that these eggs are different from the rest of the pack.

3) Bring the pan just to a boil over medium-high heat and then turn the heat down to low and set the timer to 10 minutes. Allow the eggs to simmer (very few bubbles) for 10 minutes.

Tip: Gently stir the eggs a few times near the beginning of the simmer if you are planning to make deviled eggs, this will ensure that the yolk is centered in the egg.

4) Remove the pan from the heat and pour out all of the hot water. Rinse the eggs with COLD water to stop the cooking process. Rinse them 3-4 more times with cold water and then place the pan of eggs into the fridge without any water.

* If you choose to keep your hard boiled eggs for later, be sure to store them properly for food safety.

When you are ready to peel the eggs, place one in the palm of your hand and gently roll the egg on the countertop to loosen the shell. Then begin peeling from the large end of the egg, where there is a slight air bubble. They should peel easily, but if you have tiny pieces remaining, be sure to rinse the peeled egg again with cold water.
