It looked like being a quiet weekend in our household so we decided to visit my sister in law on the other side of town. Somehow we got talking about Easter cake pops and on the spur of the moment we decided to bake some impromptu Easter cake pops, much to our children’s delight!
Now when you are in someone else’s kitchen you often find that you do not have the same utensils and ingredients as in your own and this was certainly the case today, as we discovered during the course of baking the Easter cake pops.
We had no problems with the cake baking. There was a chocolate cake mix in the pantry, some eggs in the refrigerator and a dish just the right size,step 1 accomplished with ease in 35 minutes or so. Send the kids off to play, while we have a coffee and wait for the cake to cool.
Step 2: make the cake balls. This is where we encountered our first obstacle. No frosting in the pantry. However we were fortunate to have some cream cheese and icing sugar on hand. So a homemade batch of frosting was created in short order.
About now we have an impatient group of children on our hands who “want to help”…ok so maybe letting them crumble the chocolate cake wasn’t a great idea…perhaps a little of it got eaten in the process!! Still, we were on track! The crumbled cake mixed with frosting, made into balls and put into the fridge while we got our decorating things together.
Now, we had thought about this a little bit before we started. Yes, we did have lollipop sticks in the cupboard. Luckily my sister in law likes to bake occasionally and had some sticks left from her last batch of homemade lollipops! I know a lot of people who wouldn’t have had them in their pantry!
This is when we struck the biggest obstacle. My candy melting pot was on the other side of town! So a microwave, a bowl and a tall mug was all we had and we had to make do with them. Not so bad when it came to just dipping the ends of sticks into them to attach the sticks to the cake balls, but we knew there more difficult times ahead…
By now the kids were “chomping at the bit” so it was a case of “getting it done”, and now! As the candy had a tendency to cool quite quickly, it made it difficult to get a good smooth consistency on the cake pops. We covered the cake pops as quick and as good as we could, with the children running riot with the sprinkles and the decorations that we had found in the pantry.

The end result : our children had a lot of fun and best of all, the Easter cake pops tasted great!
The Easter holiday is my favorite time of year. I've never heard of Easter cake pops before they look delicious, might try making some of my own!
Give them a try Penny, its only the decorating that's a bit fiddly. My kids love helping with that though and it is very entertaining and both kids and adults love eating them!
This reminds me of when I was a kid and my mom used to make popsicles by freezing kool-aid. We were as excited as if we'd just won the lottery.

Hi John, They are the latest sensation as far as treats go, kids go crazy for them ...and so do adults when you try them! And yes, they are super yummy!
I bet my grandkids would love them. Maybe Grandma can bake some. :))
