Is Dehydrating Worth It?

In my previous article, Is Home Canning Worth It, I discussed the pros and cons of preserving your food by canning. Home canning is only one economical way for preserving food. Food dehydration is another, simpler form of preserving food. American settlers used food dehydration to dry foods like grapes, apples, corn and meat, removing the moisture to prevent food spoilage. Canning does the best job of keeping the taste, appearance and nutritional value of food and drying is the perfect way to feed your family nutritional snacks.

If the air is hot, not humid, you can use the sun to dry. If you live in a humid climate, you can use an oven. Dehydrating with an electric oven can be costly. A convection oven with controllable temperature and continuous operation is an ideal way to dry, using less electric than a traditional oven. I have a small, countertop oven that I use for dehydrating during harvesting season, the rest of the year, I use it as a second oven for cooking.

The next best way to dry is with a food dehydrator. Many food dehydrators are available with varying price ranges, anywhere from $30 to over $200. I recommend buying a dehydrator that has multiple heat settings as it gives you more control over the drying process.

I own two dehydrators, a round and a square one and I prefer the square one. While the round ones are cheaper, the square dehydrators dry your food more evenly. If you don’t want to spend the money on a square dehydrator, make sure you get a round one that has the fan and motor in the lid. I have one made by Open Country and they cost between $40 and$80.

To ensure a good quality product, you must prepare vegetables and fruits for drying as soon after harvesting as possible. Dry your foods rapidly but not so fast the outside becomes hard before the moisture inside can evaporate. Never interrupt the drying process, letting it cool down then start drying again. Partially dried food quickly grows mold and spoils. Humid air will also slow the drying process so consider this before picking a day to dehydrate food.

When making jerky, place your meat in the marinade, in the refrigerator to set for several hours. Never reuse the marinade, throw it away. Preheat your meat to 160 degrees F before dehydrating since a dehydrator doesn’t heat quickly enough to kill the organisms on the meat.

Dried apples, bananas, raisins or pears are a tasty treat. You can slice and dry fruits or puree them for fruit leather. My favorite snack is cinnamon apple chips. Slice your apples and let soak for 3 minutes in equal parts lemon juice and water, enough to cover. Drain then toss with cinnamon and sugar (I like to use liquid Stevia in the lemon juice instead of sugar). Place on racks and dry until crisp. Store your chips in an air tight container and keep in refrigerator.

Like canning, there is an initial investment but the savings make the cost worth it.

Year after year my mother would spend countless hours canning vegetables. I especially loved the canned green beans, they were delicious and nothing can compare to canned fresh vegetables.

Thanks Earl. I love to can and dehydrate. You just can't beat the flavor. My son's favorite is green beans. When I can, I have to make sure I have enough to take him some.
