Santoku And Chefs Knives – You Need at Least One

Santoku and chefs knives are the most versatile knives any one could own. Both are the basic knife someone who barely cooks should own and are the most used knives of more advanced and professional cooks. The first thing to cover should be what Santoku and chefs knives are. Let’s start with the chef’s knife. A chef’s knife is typically a 1 ½ inch wide blade and is available in lengths ranging from 4 to 12 inches. There are two styles for a chef’s knife, German and French. The German style is more curved along the whole length of the blade. The French style is straighter until the end and then curves up near the tip. Only you can determine which style is best for you. Neither one is superior over the other, just different. Both styles are designed to perform well at many different cuts, rather than any specific one. It can be used for mincing, slicing, and chopping vegetables, and slicing meat

Santoku knives are lumped with chef’s knives because Santoku knives are simply the Japanese versions of the chefs knife. They have the same general width and same length options. It features a blade shape having a straight spine that drops sharply along a curve down to the point. The Santoku is mainly designed for cutting fish, vegetables, and boneless or low density boned meats such as chicken. A feature grown in popularity for this knife is to have a “hollowed” blade, meaning there are half-circle indentations along the length of the blade. The indentations do pass all the way through the blade, only a few millimeters in to it. The hollowed areas are to help prevent slices of meat and vegetables from sticking to the blade for faster cutting.

As you can see, Santoku and chefs knives are very similar, but have slight differences in shape. Whichever shape you choose is solely based on your personal preference.
