Easy Slow Cooker Chicken And Dumplings

I wish it was winter ALL YEAR LONG! No, not because of the cold weather, but because I get to pull out my absolute FAVORITE kitchen appliances: The Slow Cooker!

And what is better then using my cherished kitchen gear? Chicken and Dumplings of course!

This recipe is very simple and easy to make. It is usually my go to recipe for slow cooker recipes because I usually have all of the ingredients already on hand. I don't know about you, but that's ALWAYS a plus for me! Why agonize about what to make for dinner and stress about how much time you DON'T have to dedicate to meals? That's a big waste of time and can cause a headache that you don't need. I don't know how anyone could resist being able to make a home cooked meal without hardly lifting a finger. This is the perfect meal is you have no time on your hands and even better for a dreary-looking day inside the house, where all you have to do is wrap yourself in a cozy blanket!

This is one delicious slow cooker chicken recipe that will melt your worries away!


1 1/2 lbs. boneless, skinless chicken breast halves

1 large (26 oz.) family-sized can Cream of Chicken Soup

1 (29 oz.) can chicken broth

1 large onion, coursely chopped

1 (2 cup) pkg. frozen mixed vegetables, thawed

1 container refrigerated biscuit dough

1 tbsp. dried parsley

1/2 tsp. thyme

2 tbsps. butter

salt and pepper, to taste

flour (optional)


1. Combine the chicken, chicken soup, chicken broth, and onion in the slow cooker on a low. (I use 8 hours).

2. With about 1 or 2 hours left, add the mixed vegetables to the slow cooker. Add them earlier for softer veggies and later for more crisp ones; whichever you prefer.

3. In the meantime, separate and knead each biscuit (there should be 10 individual biscuits). You can knead them with flour if you want for a firmer dumpling, or leave as is.

4. Cut each biscuit into 4 pieces. They are now dumplings! (There should be 40).

5. In a large saucepan, bring salted water to a boil. Boil dumplings until cooked through.

6. While dumplings are cooking, shred chicken with forks (by now it will just fall apart. SO GOOD!

7. Add seasonings and butter. Then add dumplings to the wonderful-ness in the slow cooker!

Now it's ready to eat! I love to pair this meal with sweet cornbread. I hope that this meal can show you that there is truly nothing better to keep you warm and toasty than one of your favorite slow cooker recipes! Enjoy!
