New York Cheese Cake
Oh my goodness, this is the best cheese cake ever. I have never tasted a cheese cake more creamy, yet light, yet filling. To begin with, you are going to need a large bowl. I like to use a glass bowl, or a stainless steel bowl. I don't like plastic, because sometimes they have oily residue from previous things and it messes up the recipe.
You are going to want to make your crust first so it can cool while you are preparing the filling for the cheese cake. For the crust, you are going to use which ever recipe you are accustom to using. Either a cookie crust, Graham Cracker crust, Oreo cookie crust. Which ever one you prefer. I happen to like a pecan shortbread crust.
Mix the following ingredients together:
1 stick of softened butter. DO NOT USE MARGARINE. If you do, I will come and get you.
2 cups flour
1 egg
1/2 cup sugar
1 tsp. vanilla
1/2/ cup chopped pecans (small bits)
Mix the butter and sugar together, then add the egg and vanilla. Add the flour 1/2 cup at a time. Depending on where you live, you may only need 1 3/4 cup flour, so test the shortbread crust for consistency before adding all of the two cups. Then, you may add the pecans.
You are going to use a spring form pan. You will take enough dough to cover the bottom of the pan with a thing layer. You will bake this at 400F. in your oven for approximately 6 minutes or until you can see it change colors. You want it to be very blond. Not golden.
Remove from the oven and allow to completely cool. Then you are going to put the bottom together with the rim and with the remaining dough you are going to connect the bottom with the sides approximately 1/2 - 1 inch from the top of the pan. Making sure to smooth out the dough and make it even in thickness.
Raise the temperature of the oven to 500 degrees F. Fill the pan with the filling and bake for approx. 6 more minutes. Do not allow the top to get completely golden. Your cake will be too dark if you do.
From here on out you are going to watch your cake very closely. After you have seen the top change colors a little, turn the oven down to 200F degrees. You will then bake your cheese cake for approximately 1 hour. I say approximately, because sometimes it will take about 1 1/2 hours. So, in order to know when the cake is done, you are going to jiggle it. It will slightly jiggle in the very middle. Then you know it is done. Remove from oven. Allow to cool for approx 1 hour, and eat slightly warm. I hope you enjoy this fabulous cake. Top with Strawberries puree or with which ever fruit compote you like. Ummmmmm!!!!
Ingredients:
5 packages (8oz) Philadelphia cream cheese
7 eggs (5 complete eggs, and 2 egg yolks)
You will want to make sure you bring these to room temperature. It helps to make the filling to this cheese cake smoother. If you use them cold, the next ingredients will not mix well and your cheese cake could end up lumpy.
Beat cream cheese until smooth. Absolutely no lumps,
Add:
1 3/4 cups granulated sugar.
1/4-1/2 tsp. salt
1/2 tsp. vanilla (pure) do not use imitation.
3 tbsp. flour
Mix well to incorporate all of the above ingredients.
Then you will add your eggs one at a time. Don't ask me, it just makes the batter turn out better then if you were to throw them all in at once.
Make sure you beat this with a mixer until everything is smooth.
