Make Ice Cream at Home - If I Can Do It Anyone Can

Incredible as it might seem, I had managed to live most of my life without ever wondering about how to make ice cream at home. I know, you can't imagine such a thing ever happening. Blame it on apathy, a general lack of awareness or the month I was born, but I never once lay in bed at night thinking that I must find out how to make home made ice cream

But a few years ago I was wandering around Beirut like an idiot and I bumped into some friends I knew from Cairo. They took me to a beautiful open-air courtyard restaurant with terracotta tiles, whitwashed walls and plants everywhere.

I never would have found this little reasure on my own, and anyway, it was way over my usual budget.

The food was fantastic, but then even the street food is fantastic in Beirut. After the main meal I noticed an intriguing item on the dessert menu - Home Made Green Tea Ice Cream. Okay okay, so I don't get out much.

I hope you don't think any less of me for admitting this, but I'm not a huge lover of ice cream, except on special occasions. It's too fatty for my taste. I prefer frozen yogurt or sorbet, but I do like green tea and I like odd-ball mixes, if they work. Like strawberry juice with balsemic vinegar. Superb.

So naturally I had to try it, and it was, yeah you guessed it, fantastic. Only a little green tea had been used giving it a subtle flavour, and I don't know what they were, but I swear there were other herbs or spices added with tantalising restraint.

So when I got back I started researching how to make ice cream at home and ice cream recipes.

The basic recipe is simple, the main variations being whether or not to use eggs, and the choice between an electric ice cream maker or stirring the mixture by hand.

The easiest way is to use an ice cream maker but I don't have one so I do it the old-fashoned way.



• 1 cup of heavy cream

• 2 cups of cold milk

• 3/4 cup of sugar

• 2 egg yolks, lightly beaten

• 1 tablespoons of cornstarch

• 1/4 teaspoon salt (optional)

In my version I use 3 cups of plain, unsweetened yogurt instead of the milk and cream, and I sometimes leave out the eggs.

For vanilla ice cream add 2 teaspoons of vanilla extract.

For chocolate ice cream, add 2-3 tablespoons of unsweetened cocoa and 2oz (50gm) of good quality dark chocolate (minimum 50% cocoa) chopped into pieces.

For coffee ice cream add 1-2 tablespoons of your favourite instant coffee.

For fruit flavoured ice cream add 1lb of your favorite fresh fruit.

For green tea ice cream add 2-3 tablespoons of green tea leaves.

You can add anything you like. Almost. I refuse to try sardines, but that's just me.

Try adding cinnamon or ginger or 1 cup of coconut cream instead of the heavy cream.

Get creative. Experiment.


Combine sugar, milk, salt, cornstarch and the vanilla or coffee or cocoa powder or green tea as desired.

Bring the mixture to a simmer in a saucepan over medium heat, stirring constantly.

Place the egg yolks into a small bowl. Gradually stir in about 1/2 cup of the hot liquid. and return to the saucepan.

Heat until thickened, but do not boil.

Remove from the heat, take out the tea leaves if you used any, and if using chopped chocolate stir it in now until chocolate is melted.

If using fruit, put it in a blender with 1 cup of the warm mixture and blend as desired. Leave it coarsely chopped if you like chunks in your ice cream, blend until smooth if you prefer it that way.

Add it to the remender of the warm mixture.

Pour into a chilled bowl, and refrigerate for about two hours until cold, stirring occasionally.

When mixture has completely cooled, stir in the cream..

Pour into an ice cream maker, and freeze according to manufacturer's instructions.

If you don't have an ice cream maker, you can make ice cream in the freezer.

Just pour the mixture into a dish and put it in the freezer.

Freeze for about 2 to 3 hours, then mash it into slush; repeat the freezing and mashing cycle about 3 to 4 times so that the ice cream will be smooth.

Freeze the ice cream overnight and serve as desired.

Well that should keep you amused for a while. It's fun and, once you have mastered it, a great way to impress dinner guests or your date.
