Marshmallow fondant
Here I'm going to help you make the yummiest marshmallow fondant ever. Fondant is used to cover cakes with, most people know it to cover wedding cakes, but I use it to cover all my cool cakes with!! It is yummy and cheap to make. It's so easy...it all starts with a marshmallow!
What you will need
The first thing you are going to need is marshmallows. I prefer to use the mini ones because they are the easiest to work with. You will need a two pound bag of mini marshmallows, and a two pound bag of confection sugar. A sifter for the sugar and a tablespoon measure for the water. You will also need a big microwave safe bowl to work with and a spatula.
The magic
Get your bowl out and measure in four cups of marshmallows. You are going to add two tablespoons of water to that and throw that in the microwave and nuke it for one minute. You are going to want to take out the wire rack in the microwave if you have one because it always seems to get in the way. Once it is done, pull it out and stir with a spatula until it is creamy. If you have to throw it back in for ten seconds to better melt the marshmallows go ahead and do that. Once you have it all nice and creamy, you can add any flavors you want or if it is all going to be one color, go ahead and throw that color in there and stir it up till it is all mixed in. If you want to wait till you are done making it that is fine too! From here we will add in the sugar. You are going to want to add four cups of the confection sugar.... sifting it in...this is very important. I usually go one cup at a time and make sure it is all in there good. It will get tough to stir by the end but just make sure you get it all in there. Once that is all mixed in, I would wrap it in some plastic wrap and throw it in the fridge for like five minutes to cool it down... don't forget about it though it will get hard in there. Use it right away of leave it wrapped on the counter.
How to use it
When you pull it out, it will be ready to work with. Make sure you still have enough confection sugar out with your sifter because you will need it to cover your work area when rolling it out. Mix your colors in real good, and when you work with marshmallow fondant you will see that it is a bit sticky. Just sprinkle that over your work area and roll it out. Be generous with the sugar, it can be a pain in the butt when it sticks to the counter top. You should be able to make two batches with the two pound bags... this amount will cover a two tiered cake for sure. You can store the extra fondant in the fridge or in a cool place.
