Pasteles De Guayaba, (guava Pastries)

My Cuban husband loves pasteles de guayaba. They take him back to his childhood growing up in Miami, where they can be found in any Cuban bakery. I serve these pastries anytime as dessert, but many Cubans eat them for breakfast kind of like a Danish with their cafe' con leche. I must say though, I think that mine are better than any I've tried in Miami, and so simple to make.

You start off with some Pepperidge Farm Puff Pastry. You can find it in the freezer section in your local grocery store. Next, you need some guava paste. It's found on the Ethnic food aisle and it comes in kind of a brick. I've also seen it in cans.

Thaw the puff pastry for about 1/2 hour on the counter. When you unfold the pastry, you can very easily break each sheet into 3 sections, 6 sections total. Lay the sections on a floured countertop.

Preheat oven to 400 degrees.

Using a floured rolling pin, roll 3 of the sections thin enough to place on an ungreased 18 by 12 inch cookie sheet. It's important to not grease the cookie sheet. Once when I prepared these I sprayed the pan with cooking spray and the bottom of the pastries turned out kind of soggy and anemic looking. There is enough fat in the puff pastry so they will not stick to the pan.

Using a cheese slicer, slice the guava paste into 1/4 inch slices. Place the guava slices on top of the puff pastry spacing them about an inch apart.

Roll out the 3 remaining puff pastry sheets and lay them on top of the guava slices. Score the pastries before baking. Brush pastries with a beaten egg.

Bake for about 25 minuets. During the last 5 minuets of baking time brush the pastries with some melted honey. Do not underbake, they're better if they are golden brown and crispy. Remove to a wire rack and allow them to cool for at least 5 or 10 minuets. The guava is suprisingly hot and it will burn the roof of you mouth. Makes about 2 dozen.

I have a 30 year old son who is autistic. He loves these pastries. Even though he only speaks about like a 2 or 3 year old, the last time I made these he couldn't wait for them to be done and he kept saying, "pasteles... pasteles," using a perfect Spanish accent!
