Peanut Butter Cookies

Peanut Butter Cookies

Mix together in a large mixing bowl the following ingredients:

3/4 cup white granulated sugar

3/4 cup packed light brown sugar

1 stick softened, not melted Butter

2 eggs

1 tsp. pure vanilla

Beat until completely incorporated, then add

2/3 cup super chunky peanut butter. Beat until well mixed.

Mix in separate bowl the following ingredients:

1 3/4 cups all purpose flour, or you may use 1 cup white all purpose flour and 3/4 cup whole wheat flour.

You may also reverse this and use 1 cup whole wheat flour and 3/4 cup white flour, but it does not turn out using 100% wheat flour. They end up being too dry for some reason even if you increase the liquid.

1 tsp. baking powder

1 tsp. salt

1 tsp baking soda

Add the dry ingredients to the wet ingredients a little at a time being careful not to mix too long or your cookies will be too stiff and dry. You do not want to mix them will beaters or a mixer too long. I like to mix mine at this point by hand so I don't mix them too much. You be the judge.

Preheat oven to 375F

After incorporating all of the ingredients you will take a cookie scoop, according to the size of cookie you would like to serve your family, friends, and guests. Roll the dough into balls approximately the size of a golf ball, if you like you may make them smaller.

Place parchment paper on the cookie sheets. Do not grease!

With the backside of a glass or measuring cup you will flatten out the dough onto the cookie sheets. Do not leave in balls. These cookies do not flatten as other cookies do. At this point you may make a cross mark with a fork or leave plain. I prefer to leave plain. It seems a little more difficult to do this with chocolate chips in the dough.

Place the cookies far enough apart to allow for a little rising. They won't rise much, but don't place them too close together.

Bake cookies for approximately 9 minutes or until they are just beginning to turn golden brown. Remove them immediately from the oven and allow to cool on the cookie sheet until fairly cool. These cookies are very delicate and will fall to pieces if not allowed to cool adequately before removing them from the cookie sheet.

Serve with ice cold milk and enjoy.

Should you wish to make peanut butter chocolate chip cookies, just add 2 cups Nestle's Toll House chocolate chips
