Pizzas are extremely delicious to have and one cannot stop having those cheesy bites. Eating pizza is no big deal but along with it comes lots of calories. And after having yummy cheesy pizza you have to hit the gym for hours and hours to shed those extra cheesy calories. So here I bring you some pizza recipes which are extremely delicious and most importantly, these are low calorie recipes. So now, eat pizzas and enjoy to the fullest.
Roasted Bell Pepper-and-Olive Pizza
Ingredients:
2 large red bell peppers
2 large yellow bell peppers
1/2 cup sliced green olives
1/4 cup chopped fresh parsley
2 teaspoons drained capers
2 teaspoons red wine vinegar
3/4 teaspoon olive oil
1/8 teaspoon black pepper
2 Italian cheese-flavored pizza crusts or focaccias
6 tablespoons freshly grated Parmesan cheese
Method:
1. Cut bell peppers in half and remove the seeds.
2. Place the bell pepper pieces skin sides up on a foil-lined baking sheet and flatten with hand.
3. Broil 15 for minutes or until blackened.
4. Place in a zip-top plastic bag and seal it and let it stand for 15 minutes.
5. Peel them and cut into strips.
6. Combine bell peppers, green olives, and next 5 ingredients in a bowl.
7. Preheat oven to 350°.
8. Divide the bell pepper mixture evenly among pizza crusts and sprinkle with cheese.
9. Bake at 350° for 7 minutes or until cheese melts. Cut into wedges.
Pizza with Caramelized Fennel, Onion, and Olives
Ingredients:
DOUGH:
1 1/2 teaspoons dry yeast
2/3 cup warm water
2 cups all-purpose flour, divided
1/2 teaspoon salt
Cooking spray
2 teaspoons yellow cornmeal
TOPPING:
1 tablespoon olive oil
4 cups thinly sliced fennel bulb
2 cups thinly sliced onion
1/2 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon black pepper
Remaining ingredients:
1 cup bottled tomato-basil pasta sauce
1 cup shredded part-skim mozzarella cheese
1/4 cup coarsely chopped pitted kalamata olives
Method:
1. To prepare dough, dissolve yeast in warm water in a large bowl and let stand 5 minutes.
2. Lightly spoon flour into dry measuring cups; level with a knife. Add 1 3/4 cups flour and salt, and beat with a mixer at medium speed until smooth.
3. Turn dough out onto a floured surface. Knead until smooth and elastic. Add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands.
4. Place dough in a large bowl coated with cooking spray, turning to coat top.
5. Cover and let rise in a warm place.
6. Punch dough down and knead 5 times, and let rest for 15 minutes.
7. Roll dough into a 12-inch circle on a floured surface. Place dough on a pizza pan or baking sheet coated with cooking spray and sprinkled with cornmeal. Crimp edges of dough with fingers to form a rim.
8. To prepare the topping, heat the oil in a large nonstick skillet coated with cooking spray over medium-high heat.
9. Add the fennel and the next 5 ingredients and cook for 20 minutes or until golden, stirring frequently.
10. Preheat oven at 450o C.
11. Spread sauce over crust, leaving a 1/2-inch border and sprinkle with fennel mixture, cheese, and olives.
12. Bake at 450° for 18 minutes or until it turns brown.
