This preparation does not share any resemblance with alcoholic beer. It is a popular drink that is usually prepared around Christmas in the islands of the Caribbean, but the drink can be enjoyed all year around. Ginger beer is a favorite beverage of the inhabitants of Jamaica. The zingy drink is a good accompaniment to spicy jerk pork or chicken. It is often fermented, but the usual and simple, non-alcoholic version of this recipe makes a measure of about 2 quarts

This recipe of ginger beer is traditionally believed to be a taste of sweetness and potency. However, the intensity of the flavors increases when the drink is stored for a longer period. If you want to prepare the drink having a mild flavor, you can alter the traditional drink by adding little water. A better alternative is to serve fermented ginger beer mixed with soda water, to create a refreshing experience.

It is a well-known fact that the best drink to be served is a glass of cold Jamaican Ginger Beer. This recipe does not produce high level of toxic alcohols; even children can enjoy a drink without having a hangover. Children have fun as they enjoy the experience of tasting

the fizzy, peppery and mild brew.

The ingredients of this recipe include:

*Gingerroot - 4, fresh, large

*Cinnamon stick - 1, small

*Cloves - 4, whole

*Lime -2 or ΒΌ cup juice of grapefruit

*Sugar - 1cup, or according to taste.

The method of preparing tasty Jamaican ginger Beer is as mentioned below:

*Firstly, wash the ginger and scrape off the skin. Blend or grate the ginger. (Note: grated ginger will generate more flavors, blending is a time-saving option).

*In a ceramic jar, add ginger, cloves, lime juice, cinnamon stick along with 3/4 cup of sugar. You can also use a wide-mouthed glass if ceramic jar is not available.

*Put about 10 cups of boiling water into the jar; stir vigorously until the sugar dissolves in the mixture.

*Set the prepared ginger mixture aside; allow the mixture to cool at room temperature.

*Cover the ceramic jar or the glass tightly; Let the mixture refrigerate for one week.

*Take a strainer and line it with one or two layers of cheesecloth.

*Strain the ginger mixture, using this strainer, into another ceramic jar or gallon glass; press the solids firmly with a spoon to extract flavors.

*Discard the remaining solids.

*Put the remaining amount of sugar to the prepared brew of ginger beer; stir until the sugar dissolves with the mixture.

*The ginger brew is ready to be served in glasses along with crushed ice and garnished with mint.

In case you wish to increase the kick or excitement, you may ferment the prepared ginger beer in a bottle with a tight lid. This leads to an increase in the fizz, but the bottle should not be left unattended for too long, as it might cause an explosion as a result of increased pressure.
