So here you go again. Another dinner and no ideas. How about a recipe for easy chicken for two. You know you like chicken but after a while having no different recipes has bored you. Surprise! What if I told you there was a way to have an easy chicken dinner that is totally different than the normal baked,rotisserie or fried chicken that we all normally revert to.
It's not that hard to do with a couple ingredients and the want of a great meal. Cooking easy chicken for two is just that. Make tonights dinner an incredible experience by looking at alternative ways of preparation. It's just that simple. I know you're asking yourself "How many ways are there to make an easy and quick chicken dish that we haven't tried or that we both like?" I think you'll be pleasantly surprised at the variety of recipes to be found.
There are a couple of questions to ask yourself however, the major one is do you like white meat or dark meat or is there no preference? In my household it is one of each so that makes it more of a challenge. It is a challenge that I am up for!
Next is boneless or bone-in? For convenience go for the boneless, for cost effectiveness go for bone-in. I know all the major chefs tell you to go for bone-in for better flavor,I told you I'm a cook not a chef and I have other responsibilities in my household and go for convenience. You can get pretty good deals on chicken even in these hard economic times.
Now the prep method. How about throwing some chicken on the grill(or grillpan if your weather is not condusive to outdoor cooking). I live in the southwest so grilling is an all-year around event.(Lucky me!) A little cooking spray on that grill will make your cleanup a whooole lot easier. I told you I had other things to do and hard scrubbing of a grillpan is not on my agenda.
So making for dinners for two shouldn't be a mind-numbing experience. All you do is look for the easy way out. You can always make a pure and simple(not to mention tasty) joy that even the most inexperienced cook can enjoy! I say inexperienced to those of us who have never been under the pressure of restaurant or catering preparations. In other words, relax, enjoy and most of all don't forget to KISS THE COOK!
