The Traditional Lasagne Recipe

Today I will explain to you how to make a good lasagne. There are three steps to follow:

• Make the salsa Bolognese

• Make the Béchamel sauce

• Cook the pasta

Recipe for Salsa Bolognese

Ingredients for 4 people:

150 grams beef mince and 150 grams pork mince, 1 white onion, 1 carrot, 1 celery stalk, 2 tablespoon of tomato paste, 200 ml of passata or diced tomatoes, 2 bay leaves, 2 cloves, one glass of red or white wine, one tablespoon of olive oil, one tablespoon of butter, beef stock, 50 ml milk, salt and pepper. Parmesan

Preparation:

The first step is to peel the carrot and the onion, remove the fibre from the celery and then chop them finely. In one big saucepan put the oil and the butter, once the butter is ready, add the chopped vegetables into it. Cook it for 10 minutes until the onion is gold and then add the mince meat , add salt and pepper and cook again for another 10 minutes, stirring from time to time until the meat has turned into brownish colour. Then add the wine and cover the pan with a lid until the wine is absorbed, it takes 10 minutes. Add the tomato paste and the milk and stir it. Once it starts to boil add the diced tomatoes, bay leaves, cloves and more salt and pepper. Let it cook for 1 hour, then add some hot beef stock 100 ml and cook for another hour.

Recipe for Béchamel Sauce

Ingredients for 4 people

1 litre full fat milk, 100 grams butter, 100 grams flour, nutmeg, salt and pepper.

Preparation:

Add in a small saucepan the butter, let it melt. Take the pan away from the heat, add the flour and quickly stir with a hand mixer cooking it for few minutes. So you will have what the French call roux. Don’t let it stick to the pan. Then start to add little by little the hot milk and keep stirring. Let it cook at low heat; add nutmeg, salt and pepper. Keep stirring until it thickens enough.

Pasta: Boil a pan with salted water and add 500 grams of pasta lasagne (square pieces of pasta).Cook them for 10 minutes, then drain them.

Make your lasagne now

In an oven recipient put some oil and with a napkin cover the entire surface. Add the first layer of pasta, then cover it with some Bolognese sauce, add some parmesan and then Béchamel sauce. And then again another layer until your recipient allows. Once you put the last layer of pasta add only the Bolognese sauce and Parmesan. At this time is ready to go to the oven for 20-30 minutes. Let it rest for 15 minutes before serving. Enjoy with a glass of red wine
