What you’ll need
- 1kg lean organic beef (cubed)
- 8-10 sticks of celery
- 1 large onion
- 2 medium carrots
- 3 table spoons of brown rice
- 8 cups of beef stock
- 3 cloves of garlic
- 2 bay leaves
- 2 teaspoons of dried thyme
- 1 can chopped tomatoes
- 2 tablespoons of olive oil
- Salt and pepper to taste

First off partially cook the brown rice and while you are doing this, do the following.
Heat up the olive oil in a frying pan and add the beef. Before it gets too brown, transfer it into the slow cooker (or large pot). Into the frying pan, add the chopped up onions, celery, carrots and garlic and cook for a couple of minutes before transferring them to the slow cooker.
Then finally add the beef stock, chopped tomatoes, bay leaves, thyme and partially cooked brown rice. Add salt and pepper to taste and cook on low for 6 hours.
The vegetables and brown rice in this fat burning soup recipe should leave you with your hunger satisfied, therefore minimising the chance that you’ll pig out on junk food later on.
