Forks Over Knives has got to be the hottest documentary film of the year, at least on the subject of health. While this is my personal opinion, it is not a statement I make flippantly. Watching Forks Over Knives is so chock-full of amazing information about health and nutrition that it's almost as good as reading a pile of books on the subject. Of course I'm exaggerating a little, but the main ideas are there and presented in clear enough way that even a grade school child could easily understand. The movie is very interesting because it lays out the obvious connection between what we eat and how we feel in both today and many years down the road.
Not only does Forks Over Knives show us a panoramic view of health and food but it is showcased by two of the most respected names in the field: Dr's. Caldwell Esselstyn and T. Colin Campbell. These two pillars of modern dietary science, along with others such as John McDougall, have spent their entire careers diligently searching for the truth's that connect dietary nutrition and human health. Dr. Campbell has spent his career in the lab doing research, while Dr. Esselstyn has focused on treating patients. Forks Over Knives largely presents the story from these two doctors, but also includes about a dozen experts throughout. Only a small voice is given to the animal-based position, and for good reason; it takes very little time to see that the evidence does not support an animal-based diet. Little to no facts were presented that would suggest 'animal' versus eating 'plant' is a good idea. Only robotic, scripted responses were fielded when interviewing the expert opposition which boldly claims animal foods are good for us but citing no facts.
Forks Over Knives is more than a fact-machine, though. It is a story about real people, too, following the saga of several individuals who are very sick with diseases of affluence (heart disease, high blood pressure, Type II diabetes, etc) as they journey from darkness into the light of a healthy life. These happy people found that many of their ills could be reduced or even eliminated, and their medications cut back or even thrown away, all by doing nothing more than adopting a plant-based diet.
When you watch Forks Over Knives you'll probably have a strong reaction. My reaction was a positive one as I realized that the things I had been suspecting were true actually were proven to be so in front of my eyes. Others might be a little less enthusiastic about what is learned from Forks Over Knives as it will mean they'll have to make some pretty big changes in their eating habits. Whichever camp you find yourself in, one thing is sure to happen. You'll discover that so much of what we have been taught about healthy eating is either wrong, twisted or lies. Forks over knives is a teacher at heart and does so in an entertaining way exposing the shocking truth like a good documentary should.
Forks Over Knives is without doubt the pinnacle of over-the-counter information on health and nutrition. The film is full of beautifully made charts to show us what all these numbers mean. There are great 3D animations of how our bodies work and clear explanations of it all. Not only that, but Forks Over Knives is a history student, studying the effects of diet and nutrition through records taken long ago and only now put to use for this research. So regardless of your position on the path to a healthy life, Forks Over Knives is sure to be a film you'll want to watch over and over again.
