Giving up gluten can seem like a very difficult task but there are all sorts of foods available to those looking to do it. Also, gluten has very little nutritional value whatsoever so eliminating it from your diet can have some very positive nutritional benefits.
The first thing to concentrate on is the classic fresh fruits and veggies. Unprocessed fruits and veggies have limitless nutritional benefits and contain no processed wheat or gluten whatsoever. Feel free to use any fresh herbs and spices with these products. This will add a zest of flavor to your meals and you will be wondering what you've been missing. In terms of frozen fruits and vegetables, most are gluten free but be sure to check the nutritional label for ingredients. Also, most ice cream and sorbet is gluten free so you can splurge there without worry. There are even gluten free frozen waffles for those who don't want to totally eliminate those types of foods from their diets.
Milk and other dairy products such as cheese and butter are primarily free of gluten, but again be sure to check the ingredients on the nutritional labels. Along with dairy, any fresh beef, poultry, and fish products are free from gluten. For the frozen meats you have to check out the nutritional label and ingredients.
For many, breakfast is the hardest meal to get used to when changing from a gluten diet to a gluten free diet. Many of the common breakfast foods such as cereal, bagels, pancakes, toast, and waffles are all filled to the brim with gluten products. Don't be too wary though, the industry is quickly accommodating the increasing demand and there are now cereals, waffles, English muffins, and bagels that are all free of gluten. Many are sold at any large grocery stores so be sure to check in the bread and cereal aisles on your next trip.
Another area that many have a trouble adjusting to is baking sweets and snacks. There are now gluten free flours that are getting better year after year. Also, you don't have to worry about any gluten in sugar, salt, pepper, and herbs. Milk, baking soda, baking powder, and cocoa are also all free of any gluten products.
