Ever thought of analyzing sugar? Legends say that in the Polynesians Island was the first place that sugar was used. Around the 325 B.C. Alexander the Great said that in the East, you could find a honey which didn’t need any bees for the production. But the Arabs were the ones who extended the production fields later on. In Arab sugar is written: sukkar.
The common sugar is a more complicated carbohydrate called sucrose, coming from glucose and fructose, two simple carbohydrates. There are many types of sugar likes fructose, which is found in the fruit, lactose which is found in the milk and the glucose. It can be found in the sugar cane and the sugar beetroot, but also in the sweet corn and the Canadian maple tree. The cane sugar is a plant that can grow up to five metres, the leaves are cut up and the big trunks contain enormous quantities of sweet syrup which is then extract in a particular way. In the past in Europe, the sugar cane was such a luxury so that Germans came out with another type of sugar coming from the beetroots. This plant grows very long roots where are stored the entire sugary particle. Chemically the compositions of both sugars are the same. The process to extract the sugar is the following: the beetroot are chopped into big chunks and added in hot water where the sugary substances are dissolved and syrup is formed. Funny isn’t’ it?
There are also many types of sugar like: white sugar which is the classic one you find in everyone table and it's washed with chemicals and deprived of any beneficial vitamins and minerals. Then we find the brown sugar with hasn’t been manipulated a lot, so it’s still has minerals like calcium, phosphorus, magnesium and potassium.
The funny, actually, it’s not funny at all, is that during digestion the sugar uses all the vitamins and minerals present in the body for the process, leaving you in need of extras. It can give you an addiction like any drugs. The more you consume the more the body asks for it. So when you don’t have your high daily dose of sugar, you can become aggressive, irritated and once you have a sweet you calm down again. It can also lead to many illnesses like diabetes, obesity and caries.
People now to avoid using sugar, they use chemical sweeteners that are even worse than sugar. The less sugar you use, the less your body asks but you need to beat that addiction first.

Wow, C4men. I think that's an awesome idea and having been there an exercise in willpower and dedication. It helps to find good substitutes. Check out lifestyle bakery (comau) Their ancient grain breads are heavy but delicious toasted, have only healthy ingredients and they'll ship to you for free. I buy several loaves online and freeze them, taking out one at a time and keeping it in the fridge. Personally I avoid the ones with soy although they do a gluten free range as well. I also had to change my 'normal' mindset. Vegetables are delicious without potato and stir fry is wonderful without rice. It never occurred to me to leave out these high carb staples but nowadays my kids prefer not to eat them. Good luck with it all! The extra energy and mental clarity for me is sure worth it.
