A Veggie Day For My Vegetarian Friends

In every diet should be included a vegetarian day as the Food Guide Pyramid show us. Eating meat every day is not good as we all know and having it a couple of times daily, it´s even worse. (By meat I mean meat not eggs!). So let´s write about a vegetarian day starting from the morning breakfast to the late dinner meal.

Breakfast

Summer Berries Smoothie (Serve 1)

• 4 Raspberries

• 4 Blackberries

• 2 Strawberries

• 50 ml plain yogurt

• 200 ml pressed apple juice

• 1-2 teaspoon honey

• Few leaves of mint

Add all the ingredients and some ice cubes and blend it for few minutes. Serve it in tumbler glass.

Cardamom Pancakes with Orange Sauce

For the Pancakes (serve 4)

• 250 ml milk

• 1-2 teaspoon of powder cardamom

• 130 grams flour

• 2 free range eggs

• 25 grams sugar

• Butter

Put all the ingredients in a mixing bowl, stir it well until smooth .Add some butter in a small pan, once ready put two-three spoonful of the mixture, depending on how thick you like them. Rotate the pan wait few minutes, turn it over and cook for few more minutes. Then it’s ready

For the sauce (serve 4)

• 100 ml orange juice

• 50 grams butter

• 4 tablespoon orange marmalade

In a saucepan add all the ingredients until nice and warm.

In a plate place the pancakes, add on top the sauce and decorate with some summer fruits.

Main course

Risotto Tricolore

• 320 grams of Arborio rice or pre-cooked rice

• 2 teaspoons extra virgin olive oil

• 2 teaspoon butter

• One small onion

• Half glass white wine

• 500 ml vegetable stock

• 150 grams cherry tomatoes

• 1 big courgette

• saffron

• Salt and pepper

• Parmesan

Chop the onion and tomatoes, then in a pan heat the oil then add onions and tomatoes. Cook for 5 minutes. Add the rice and toast it for 3 minutes, then add the wine. Cook until reduced. Add the vegetable stock and the courgettes that you cut in small triangles. In the last ten minutes add the spices. When the rice it´s cooked, add the butter and the parmesan stir it and serve it.

Dinner

Devil avocado and potato salad

For the avocado (serve 2)

1 ripe avocado

2 boiled eggs

Some chilies

1 small onion

Parsley or coriander

2 teaspoons vinegar

Cut the avocado in two parts. Empty the avocado and chop them with the eggs. Chop finely the chilly, parsley and onion. Put everything in a mixing bowl. Season with salt and vinegar. Fill the empty avocado and freeze it for half an hour.

For the salad

Lettuce, spring onion, mayo, boiled new potatoes. Chop everything except the mayo! Season it with salt, pepper and powder mustard.

In a plate put the avocado and salad.
