Authentic Cuban Flan

Authentic Cuban Flan

This is a recipe that comes from my Cuban husband's family. It is the best that I've ever tasted. Enjoy!

Preheat oven to 350 degree's.

Step 1

Take 1/2 cup sugar and place it in a fry pan. Melt the sugar over medium high heat until it turns into a caramel colored syrup. Quickly pour this syrup into a 8 by 8 inch Pyrex pan. Initially this will turn rock hard, that's ok.

Step 2

Place 5 eggs, 1 can of sweetened condensed milk, 1 can of evaporated milk, 1 four ounce package of cream cheese, 1&1/2 teaspoons of vanilla, 1/2 teaspoon salt. and 1 cup of whole milk into a blender. Blend until smooth.

Step 3

Pour mixture into the 8 by 8 Pyrex pan. Place this Pyrex pan into a larger 9 by 13 cake pan into which you have poured about 1 inch of very hot water. Bake for 1 hour or until a knife inserted comes out clean.

Step 4

Remove the flan from the 9 by 13 cake pan and set it on the counter for an hour or two and then place in the refrigerator for at least 3 hours. After the flan has been thoroughly chilled, loosen the sides of the flan with a knife and invert onto a flat platter.

Step 5

Cut into squares and serve. I like to garnish mine with some coconut but my Cuban husband thinks that is blasphemy. You decide.

It recently has come to my realization how special this flan recipe is. Awhile ago I made 2 flan's for a potluck at my husband's workplace. He is a nurse at a prison. We received an over the top response that went way beyond normal potluck protocol. The first thing that happened is about 10 of his co-workers called us on speaker phone and thanked me. I thought, those folks at the prison must just be extra nice. My husband assured me that was not the case.

About 2 days later, the psychologist at the prison said to my husband, "I don't know what that was that your wife made but it was good!" Again I thought, okay that's nice.

A day or so later my husband found out that someone from the day crew hid the last 2 pieces from the night crew. What's up with that?

Fast forward about 3 month's, another potluck is coming up. My husband ventured that he wants to bring a fruit salad that I make that he likes. His co-workers demanded, "Well, it better be as good or better than that flan, or we want the flan!" I'm beginning to think that these people are possessed!

Well the latest is my husband just informed me that there is another potluck coming up, but this time he needs 3 flan's instead of just 2 because the night crew wants one for themselves that they don't have to share with the day crew. Seriously, I think these poor people have been in prison too long and they really need to get out more.
