Breakfast Casseroles From the Frugal Diva

It’s common knowledge, breakfast is the most important meal of the day. True, that is, if you can find the time to fix it. For me, breakfast usually consists of 2 slices of whole grain toast with a dab of natural peanut butter.

Since we can’t sit down together for breakfast during the week, I like to make large breakfasts on the weekends when we’re all home together.

I have several recipes, in my arsenal, for breakfast casseroles. These recipes are perfect to make the day before. I did this over the Thanksgiving holiday. I made three different casseroles, preparing them for the next morning while I cooked dinner. Our visitor’s loved them and I loved the time it saved. I also make these breakfast casseroles for dinner.

Breakfast Casserole for a Crowd

This breakfast bake serves 12 people. I cut it in half when I make it for us and not a houseful of Thanksgiving guests.

1 24 ounce bag frozen shredded hash browns

2 cups diced ham

1 tablespoon onions, chopped fine

12 eggs

1 cup shredded Mozzarella cheese

2 cups shredded Cheddar cheese

1 cup evaporated milk

1/4 cup chopped, fresh parsley

1 teaspoon salt

1 teaspoon black pepper

1 pound bacon, fried until crisp

Preheat oven to 350 degrees F.

In bowl, mix frozen hash browns with chopped onion. Spread half the hash brown mixture in bottom of large, greased casserole dish. Layer one cup diced ham over top. Combine cheeses with chopped parsley and sprinkle half of mixture over ham.

Layer remaining hash brown, ham and cheese mixtures, pat down each layer.

Combine eggs, evaporated milk, salt and pepper, beating until smooth. Pour egg mixture over casserole layers. Cover with foil and refrigerate until ready to cook.

Bake for 30 minutes. While breakfast is baking, fry bacon until crispy and crumble. Remove foil, sprinkle bacon on top of casserole and bake, uncovered for an another 10 minutes or until top is lightly browned.

I also cook this in a slow cooker with excellent results. Just place ingredients in a lightly greased crock pot instead of a casserole dish. Cook for 4 to 5 hours.

Cheesy Breakfast Casserole

This casserole is quick, easy and with only 7 ingredients, cheap. This makes four servings and you can easily double to serve a crowd.

1 pound bacon

1 medium onion

4 cups frozen hash browns, thawed

6 eggs

2 cups Cheddar cheese, shredded

1 ½ cups cottage cheese

1 ¼ cups Swiss cheese, shredded

Salt and black pepper to taste

Preheat oven to 350 degrees F.

Brown bacon and onion, stirring until bacon is crisp and drain.

Beat eggs until frothy and stir in remaining ingredients. Add bacon and onions to egg mixture and stir.

Pour into greased baking dish and bake uncovered, for 35-40 minutes or until eggs have set. Let stand for 5 minutes then cut.
