We all know that breakfast is the most important meal of the day. So let's make it really good. I know that we survive on the oatmeal and raisins, or the eggwhite omelet, or even the whole wheat toast with a whole fruit spread, but let's expand a little shall we?
How about some nice,hot,fluffy pancakes for a starter once in a while. There's so many ways to make them and if you make them with the right ingredients not only are they easy food but healthy as well. What a wonderful way to start a day! Now I know we all have time constraints in the morning before work so just make them the night before and cover the batter and stick in the fridge overnight. Give 'em a little stir in the morning and the batter will be as good as new.
Just think of the many different additions you can make to the traditional batter. There's things like(of course)blueberries,bananas,walnuts,cinnamon, and of course the childrens' favorite,chocolate chip. You can change up the batter also with anything from buckwheat flour to soft winter wheat flour to oat flour. The possibilities are endless.
I got one, how about a banana walnut pancake. Tasty like the muffin but you can make it with some oat flour and your own bananas and walnuts to control all the fat and sugar content. Remember you don't have to put any high sugar content syrup on one of those babies, they're naturally sweet and tasty. If you do think you can't have pancakes without syrup off some kind think of a homemade caramel sauce. Yea, I know it's all sugar but you won't need a whole lot if you make it yourself because it has better and richer flavor than the storebought and it's half the price to make. It also lasts in the fridge for a good amount of time.
Also you might want to think about some kind of savory pancakes made real thin and stuffed with many different fillings. Okay if you want to be picky about it those are crepes but they do make an easy food item.
With a little practice and patience a crepe is a great way to use leftover meats and veggies. So now you know a pancake is not just for breakfast but is an all around way to change up your everyday menu. And you can experiment with the batter in many ways, I just mentioned a couple so have fun and REMEMBER TO KISS THE COOK!
