Breakfast on the Go!

Breakfast is my least favorite meal to prepare of the day. Let's face it. It is just too challenging to make a good home-made breakfast in the morning. It's so much easier to stand by the coffee pot or tea kettle and drink a cup of empty calories, right? Who has the energy to make a hot breakfast anymore? Not me! I am a busy woman and my schedule is never ready to take a back burner. I have to be up and ready to go each and every day. Why

I am a busy home-school mother, that's why! I have 5 hungry boys who wake up with a weeks worth of energy each and every day. (At least the younger three, the teenagers are working on perfecting their "I'm not ready to get out of bed" moan).

Now, I do live in America. Even worse, I live in California. Convenience meals surround me. I could easily go broke buying drive through meals or sugary cereal each day, but I don't want to not only waste the money, but undermine my children's health. SO I simply have to pull up my boot straps and formulate a plan of attack.

You may not think of meal planning as needing a plan of attack, but you may not be surrounded and swimming in testosterone like me. I need a plan.

I have recently fallen in love with the new social media site Pinterest. At first its a bit overwhelming to navigate, but then, like magic even I understand! Pinterest brings the best of the internet to your fingertips by allowing people to share what they think is awesome. I have found some pretty amazing ideas and tips so far.

The ones I am most excited about are the recipes! I just stumbled on a baked oatmeal recipe that is easy, freez-able, and delicious.

I love feeding my kids oatmeal for a few reasons.

  • Oatmeal is inexpensive
  • Oatmeal can be dressed up with many toppings for variety
  • Oatmeal fills their bellies

Like I said, I have 5 boys. They are always hungry. I was amazed that they can make it almost to lunchtime without informing me of their impending starvation when they have a nice bowl of oatmeal for breakfast. That works for me!

Back to my plan. I plan to make a batch of these individual servings about twice a month. I plan to vary the toppings to make sure I have something for everyone. My kids love either almonds or chocolate chips on theirs.


If your kids have never eaten "real" oatmeal, you will have to survive the first couple rounds of "Yuck!". Healthy great food tastes awful to mouths accustomed to sugar and empty-calorie cereals. Hang in there. They really are delicous!


2 eggs

2 cups applesauce, unsweetened

5 cups, Old Fashioned rolled oats

1 banana, mashed

2 3/4 cups milk (I used 1%)

1/4 cup flaxseed meal

6 packets of Sweetleaf Stevia or 1 1/2 teaspoons stevia powder

1 tablespoon ground cinnamon

3 teaspoon baking powder

1 teaspoon vanilla extract

1 teaspoon salt

Optional toppings: raisins, walnuts, chocolate chips


Preheat oven to 350 degrees.

Mix eggs, vanilla, applesauce, banana and Stevia together in a bowl.

Add in oats, salt, baking powder, flax and cinnamon and mix well with wet ingredients.

Finally pour in milk and combine.

Spray a 12 and 6 capacity muffin tin with cooking spray or use cupcake liners.

Pour mixture evenly into muffin tin cups.

If using toppings add them onto the tops of muffins now. If using fresh or frozen fruit, drop it right into the batter.

Bake 30 minutes until a toothpick in center comes out clean. Cool and enjoy or freeze them in gallon freezer bags.

When ready to enjoy, simply warm and serve. My kids loved them with a little bit of milk.
