Chicken Recipes By the Frugal Diva

You’ve heard the commercial, “Beef…it’s what’s for dinner”; in our house, the saying is “Chicken…it’s what’s for dinner.” If chickens were to ever go away, I honestly think we would starve. In my opinion, it’s the perfect meat; cheap, healthier and oh so tasty; not to mention, chicken can be cooked many different ways.

I looked for my tastiest chicken dishes to share with you and hope you like them as much as we do.

Frugal Diva’s Special Fried Chicken

Fried chicken is the ultimate comfort food; add mashed potatoes and green beans and you have a feast.

1 whole chicken cut in pieces

2 cups flour

1 tablespoon seasoned salt

1 tablespoon garlic powder

1 tablespoon paprika

1 tablespoon salt

1 teaspoon black or white pepper

1 quart buttermilk

1 pint water

1 tablespoon baking powder

Preheat cooking oil to 340 degrees F.

Combine dry ingredients and set aside.

Dip chicken into dry mix and shake off excess. Dip in buttermilk mixture, shake off excess and dip into dry mix again.

Drop chicken into fryer and cook until done.

I don’t like using my deep fryer that much so I use a skillet most of the time.

Add oil to cast iron or other heavy skillet and heat to approximately 340 degrees. Place pieces in hot oil and cover skillet with lid. Let cook for 8 minutes then turn. Replace lid and cook for another 8 minutes or until chicken is done and juices run clear.

You can skip the first flour dip and let chicken pieces soak in buttermile for 1 hour. Shake off excess and dip in flour mixture and fry. The buttermilk soaks into the chicken, giving it a slightly different flavor.

Frugal Diva’s Best Oven Fried Chicken

Here is the polar opposite to our southern fried chicken. This is much more diet friendly but just as good.

4 large chicken beasts

½ cup melted butter or margarine

1 teaspoon seasoned salt

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon black pepper

¾ cup bread crumbs - Italian bread crumbs are good for this also

Preheat oven to 350 degrees F.

Place bread crumbs and spices in bowl and mix well.

Tenderize chicken breasts with a mallet and dip into butter, turning to coat entire piece. Then roll in breadcrumb mixture until well coated.

Place in lightly greased baking pan and bake for 45 minutes or until done. Chicken breasts dry out easily so do not overcook. The 45 minutes is approximate and could be more or less, depending on your oven.

While I use chicken breasts for this, you can also use whole pieces of bone-in chicken. Just raise oven temperature to 375 degrees F.

With the buttermilk chicken, the minimum marinating time is 1 hour, however I like to let my chicken marinate in the buttermilk overnight; it makes the chicken even juicier.
