Chocolate Chunk Banana Bread

My family enjoys bananas quite a bit. Even though we are pretty good at eating them all, there are times when a few get so ripe that no one will touch them. This is the perfect time to make banana bread.

Tips

Eggs: This recipe also works for me because we have 6 egg-laying chickens. So, I am always looking for recipes with eggs. This recipe has 4 eggs, which almost uses up the eggs my chickens lay daily.

Chocolate: If you do not have baker's sweet chocolate, use chocolate chips. I have even used a chopped up chocolate candy bar (with or without nuts, caramel, or nougat) left over from the holidays or Halloween in lieu of the baker's chocolate.

Oil: Vegetable oil may be used instead of canola oil. I have sometimes used melted butter when I ran out of oil.

Making ahead of time: I often freeze one loaf of the bread- that's if we don't eat it all first!

The Recipe: Chocolate Chunk Banana Bread

4 lightly beaten eggs

2 cups mashed bananas (about 6 bananas)

2/3 cup canola oil

1/2 cup milk

4 cups flour

2 cups sugar

4 teaspoons baking powder

1/2 teaspoon salt

2 packages (8 ounces) baker's sweet chocolate

1 cup nuts

  1. Heat oven to 350 degrees
  2. Stir eggs, bananas, oil and milk. Make sure it is well blended
  3. Add flour, sugar, baking powder and salt, stirring until moistened.
  4. Stir in chocolate and nuts
  5. Grease two 9x5 loaf pans
  6. Pour badder into pans
  7. Bake for about 55 minutes. Chocolate Chunk Banana Bread is done when a toothpick poked into the center of the bread comes out clean.
  8. Set timer for 10 minutes. When the 10 minutes is over, remove from pan and cool on wire rack.

Preparation time: 20 minutes

Baking Time: 55 minutes

Conclusion:

My family enjoys Chocolate Chunk Banana Bread and I get many requests from them to make it again. We often serve it as a dessert because it is sweet and contains chocolate. Other times, I have given this away as a gift to some one who needs some cheering up, at Christmas and Thanksgiving gatherings, or as a gift for the host or hostess when invited to a dinner where the host supplies the entire meal.

This is a great way for people who do not like to let food go to waste to use up over ripe bananas. Having extra eggs around makes for a great excuse for making this bread, too.

Everything in moderation.... It shouldn't hurt you to eat it once in a while. All the time, on the other hand, that could really mess you up. If you (that is sometimes me) don't have the will power to prevent yourself from eating the whole batch, only make it when you have friends over.

And here we go again just when I have Heather and AJ trying to push me into being more conscious of what I eat, here come Rebecca with a recipe that has my mouth drooling. Now just to make sure you all know I can cook, bake and do everything in the kitchen my good wife (a good cook) can do, I intend to make this with one change Rebecca I think 8 ozs sweet chocolate far too little so I will make a slight if not great adjustment to that portion of the recipe. Thank you my Sunday morning has been made.

This takes banana bread to a whole new level Rebecca! I never would have thought of adding chocolate but it sounds a divine combination. Have you ever put your extra bananas (in their skin) on the BBQ? Although my Canadian husband finds it strange I think they're delicious with steak, cooked onions and salad.

I've never tried it with steak. I have put bananas in the fire pit after I split them, added chocolate chips and/or marshmallows and covered them with aluminum foil- banana boats I believe. They're yummy! Thanks for the suggestion. Net time I get steak, I'll have to try it.

We also BBQ pineapple. If you like it with chocolate you'll like it with steak or sausages too. It's the sweet and protein bit.

A neighbor had a "chocolate Party" at her house. It was kind of like other home parties except I learned how chocolate could be used with all kind of foods. Most of the presented ideas were new to me. There were samples and they tasted great! So I can imagine that your ideas would, too, because they are similar. I love pineapple on the bbq, by the way. Heather after reading this recipe I think you will be wasting good bananas on a braai (BBQ) rather make the bread just increase the chocolate, "make the bread" I can hear the family shouting.
