Cooking With Out A Net: Why A Recipe Isn\'t A Rule You Have to Follow

We all know the type: the people who are so uptight that they will balk at trying a recipe if the exact ingredients, down to the brand names are not in their cabinet at the very moment they are going to start cooking. These are the people who think of a recipe as a sacred document, not something to be strayed from or fudged around with. Heaven forbid that they are asked to make a substitution of any kind. Listen people: a recipe is not written in stone. You can make changes, you can experiment. But, keep these thing in mind when you do.

Number one, let go of perfection. Not every attempt is going to be a winner. You can try one minor adjustment and completely kill a recipe. You might hit a winner with the looks but the taste will be off or the reverse might be true. If you are going to be worked up with any minor failures, stick with the recipe until you are more confident.

The best way to make a substitution is to use like for like. Pears and apples can be used interchangeably in most recipes. You can pair apples and pears with very good results as well. Virtually any squash can be used in a squash recipe with the exception of spaghetti squash because of its unique texture.

If you are still afraid of making any changes to a time honored recipe or find yourself hesitant to try a new recipe type, start with soups. Most soups are collections of certain foods in a broth or cream base which allows you the ability to be more free. If you take a vegetable soup recipe, for instance, you know that you can skip the things that you do not like or cannot eat and add in either more of the veggies that you do like or add in new ones. You can make it vegetarian if you would like or use stew beef to make it more hearty. You can add beans, rice or pasta . You can add anything that you want to the soup. That is the key to your recipe success- don't hold back. Add in a little extra onion or garlic. Think that butternut squash would be delightful in your chili in place of ground beef? Throw it in. Don't be afraid of the foods in your pantry- you are the master, now cook with them.
