If you want to prepare the perfect meat pastries then Russian Chebureki deserves special mention. This food can be taken anytime and you will really love to have it. Lamb is used as the main ingredient and that makes it fatter and bigger.
The other ingredients for preparing the Chebureki dough include water, white flour, egg, olive oil and milk. Milk and water is taken and then mixed. Then half cup of flour is added to the liquid mixture to dissolve it slowly. Gradually the whole flour is added to the mixture and the egg. Now you need to knead the dough and you can do it with your hands. The dough takes the shape of a sausage. Add flour dust to it while you knead the dough so that it does not stick to your hand. After it no longer sticks to your finger, put it in the refrigerator and keep it for an hour. In between you can take the dough out of the freezer and knead it once more.
There are different kinds of filling that could be used while you prepare Chebureki. You can use ground beef, ground pork, chopped white onion, chopped cilantro, water, chopped white mushrooms, garlic cloves, spices, pepper, hot sauce and salt.
Take some butter and then fry up the onions and mushroom in it until the mixture turns golden brown. Now all the other ingredients for the dough are combined in a dish so that it all gets thoroughly mixed. You need to roll out the dough and make it longer and then cut into pieces to form thin large circles. The circle should be bigger approximately like the diameter of your plate. Now the filling is ready so you take 2 tablespoons of the filling into half of the dough and leave some space between the meat and the edge. This makes it convenient to fold the dough and not to damage it during folding. It is sealed using hands and you can even pinch the edges. Take a fork and press it along the edge of a Chebureki so it takes the shape of a traditional Russian Chebureki.
Now you have to deep fry the chebureki in vegetable oil and flip it in the frying pan until it turns golden brown. If you have not cooked the meat earlier then you can also place the finished chebureki in the oven and keep it there for about 20 minutes at the temperature of 300F. After you are done with frying the Russian Chebureki, keep them on paper towels.
This Russian food taste great and those who have already tasted the apple or potato piroshki will surely love to taste this one. You can call your friends and prepare it. Traditional Russian chebureki usually have thinner dough and made with raw meat. You can serve this delicacy along with garlic dip and you might recall the taste of potato piroshki. Lamb is generally used but nowadays even turkey and beef have gained prominence.
