Apple And Sprouts Salad
Ingredients:
1 carrot
1 celery stalk
1 apple
1 cup bean sprouts
3⁄4 cup sprouts
1 tablespoon lime juice
1 tablespoon finely chopped coriander
2 tablespoons sunflower oil
1⁄2 teaspoon sesame oil
1⁄2 teaspoon soy sauce
1 teaspoon grated fresh ginger
Pepper to taste
Method:
Cut the carrot and celery into thin, long slices. Core out the apple and chop it. Mix the apple, carrot, celery, sprouts and beans sprout in a big mixing bowl. Now add in the lime juice, sunflower, sesame oil, soy sauce, grated ginger and pepper and mix well. Garnish with chopped coriander.
Salad With A Crunch
Ingredients:
200 g cabbage, finely chopped
1 large carrot
4 onions, finely chopped
150 g plain low-fat yogurt
Pepper to taste
30 g radishes, sliced
Plain roasted peanuts
Method:
Mix the cabbage, onion and radish in a bowl. Add in the yoghurt and a reasonable amount of pepper. Toss this mixture well. Transfer this into small bowls and garnish with a generous amount of roasted peanuts for the crunchy feel!
Rainbow Salad
Ingredients:
1 cup of diced bell pepper
1 cup of chopped broccoli
1 cup of shredded carrots
1/2 cup diced radishes
1/2 cup of cream
50 gm of finely diced onions
Method:
Combine the bell peppers, broccoli, carrots, radishes and onions in a mixing bowl and toss it well. You could also add your favourite herbs and spices to this salad. This specific salad tastes amazing when served chilled.
Green Pea And Cheese Salad
Ingredients:
1 cup of green peas
1/2 cup of mayonnaise
1/2 cup of diced red bell pepper
1/2 cup diced celery
2/3rd cup of grated cheddar cheese
3 lettuce leaves
1/2 cup diced celery
Salt and pepper to taste
Method:
Mix mayonnaise, salt, pepper, red bell pepper and celery in a bowl. Now add the green pea and cheese and toss the salad well. Drizzle the chopped lettuce on top and refrigerate this for a while. Nothing like green pea and cheese salad serve chilled.
