Flexible Chili Con Carne

This is a Chili with a few unusual touches added. It’s a great dish for a large group, for example a Superbowl party.

Ingredients:

12 rashers of thick cut bacon, cut into one inch pieces

2 red onions, finely chopped

2 white onions, finely chopped

2 red bell peppers, finely chopped

2 yellow peppers, finely chopped

5 cloves of garlic, finely chopped

4 tablespoons dark chili powder

2 tablespoons chipotle chili powder

2 tablespoons cumin

2 teaspoons dried oregano

2 tablespoons smoked paprika

2 lbs ground Bison or Buffalo meat

2 lbs ground pork

1 lb ground veal

1 28oz can whole tomatoes

1 14 oz can chopped tomatoes

1 10 oz Rotel tomatoes with lime and cilantro

1 lb jar B & M beans

1 14 oz can mixed beans

1 14 oz can black beans

1 can Budweiser beer

Method

In a very large Dutch oven or stockpot, fry the bacon until it is golden brown.

Add the onions and peppers and cook slowly for 4 to 5 minutes and then add the garlic, chili powders, cumin, oregano and smoked paprika and continue cooking until the vegetables begin to soften.

Next add the bison/buffalo meat and break it up with a wooden spoon or fork. Keep stirring over medium heat until the meat is slightly browned. Then add the pork and veal, breaking this up also and continue stirring until all the meat has turned brown.

Finally add the tomatoes and the beans and stir in the beer. Stir well and check for flavor adding salt and pepper to your taste.

Now let the whole lot simmer very gently for two hours, stirring occasionally.

Serve with tortilla chips, shredded cheese, sour cream, chopped scallions, chopped onions or whatever takes your fancy.

Notes:

Although we have used bison, pork and veal here you really can use any meat combination, even chicken or turkey - whatever suits your taste.

There is a lot of chopping. I recommend using a the chopping attachment of a small blender.

Obviously the spiciness comes from the chilli powder. You can therefore vary the amount you use to suit how hot(spicy) you want it to be.

There is such a variety of beans on the market now that again you can use any combination you like. We thought the above offered a good taste and texture combination.

I am not sure what added value the beer gives but don’t forget for every can you put into the pot drink one yourself. It doesn’t have to be Budweiser either!!

Actually this recipe is a lot simpler that the long list of ingredients would suggest. An ideal recipe for the budding amateur chef.
