Fried Fish Recipes

A comment by Heather (a fellow article writer) on a recent article I wrote got me thinking. The comment was how did I prepare and cook the fish I caught and was the cooking the wives realm or did the cooking fall to the men.

The two species of fish we eat here in the western basin of Lake Erie both lend themselves to fried fish recipes so I will concentrate on those.

Walleye are the choice of many fishermen and there are a variety of ways to cook them. My favorite is the fried fish recipe. Walleye can be pan fried or deep fried. My personal favorite is deep fried. Following is how I prepare my walleye.

1. Fillet and skin the fish

2. Zipper the fillets (This is a method of removing almost all the bones from the fillet)

3. Cut the walleye into chunks Approx. 1 ½” X 1 ½”

4. Dip in an egg/milk wash

5. Coat with breading. I prefer a mixture of Shore Lunch original and Shore Lunch cajun

6. Drop into peanut oil (Temp approx 340 degs)

7. Cook approx. 3 minutes. I wait for the chunks to float. At that point they are done or very near done. The worst thing you can do is overcook the chunks. They should be moist and flaky

8. I then dump the chunks into a clean paper bag and salt lightly. After a couple batches are done I send them to the kitchen for eating. I continue to cook until all the chunks are cooked then join the family. I do sample a few while cooking (Cooks prerogative)

Walleye are great but my personal favorite are Lake Erie Yellow Perch. These fish are much smaller than the walleye so more care is necessary in their preparation. Following is how I prepare my perch.

1. Fillet and skin the perch

2. Cut the fillet into two pieces and remove the belly meat

3. Dip in an egg/milk wash

4. Coat with breading mixture as above

5. Drop into peanut oil (Apprx. 340 degs)

6. Cook for two to three minutes. The perch fillets are much thinner than the walleye chunks so you have to be careful not to overcook them

7. I use the same method as above to get the fish to the table.

I remember as a kid on our annual fishing trip to Canada that the women did most of the cooking however now I do all the fish cooking. It’s not that my wife can’t do it. It’s just that I enjoy it and it gives her a break from the kitchen duties.

There are many recipes for both of these fish. These two just happen to be my favorites.

Thanks for the comment. A lot of people wonder about the paper bag. My son picked that up from some fellow electricians on a job in Alabama. It soaks up excess oil and keeps them surprisingly warm.

Oh sounds delicious. I love the way you skin and fillet your fish - even removing the bones. This is how my dad always does it too. It makes for such delicious and easy eating so that even children love eating the fish! We were also taught as children to remove the blood line so I'm very spoilt when it comes to eating fish.... I hope if I'm ever in your parts I'm wandering by when you're doing the cooking! Delicious!
