There are very few options for international cuisine that has included many Gourmet recipes in it. I tried many cuisines in Latin-America but nothing as the Peruvian one.
Different cuisines I tried to from Chile, Cuba, Colombia, El Salvador, Nicaragua, Puerto Rico, etcetera; make me realize that is not easy to get so many recipes especially when few ingredients used. In Colombia, few soups available, Chile has more sandwiches specialties, Cubans use more Pork in their recipes, Argentinean all based in red meat barbecues and centroamericans' recipes are very similar each other with beans and rice.
One of the foods I really encourage to try is Peruvian. Recipes are innovative. The assorted 600+ dishes makes the Peruvian Cuisine one of the most qualified and chosen from all cultures; even European and Americans. They make a new dish with remaining ingredients from a first dish (not leftovers), they make a dish with two ingredients only and they include in their old recipes new ingredients never tasted before. In the country of Peru, there is black corn named “Maiz Morado” which the cook a typical “Chicha” a black drink which is also cooked with special flour and make a pudding named “Mazamorra” with apples and dry fruits. Tasting AAA+++
One of the most popular aphrodisiac dish with Fish or Seafood or both; as known as “CEVICHE” which involves immersing delicate raw fish in aromatic citrus juices, slows cooks the fish in aromatic fresh fish, added with hot Peruvian “Rocoto” sauce with different spices and secrets make big difference with other dishes. There are over 100 types of Ceviche with various tastes including cocktails in their recipes, making a delicious plate.
These are some characteristics of the Peruvian cuisine:
1) Gourmet food; highest quality food. Ceviche is one of the most typical dishes known as gourmet.
2) Atypical: Most of Latin cuisine has many in common, i.e. the beans and rice, or the pork, or the fried chicken. Peru recipes are many dishes that are unknown by their ingredients and mixing. Some flavors are sour with sweet, green rice with chicken, green mash-potatoes and many more just to mention some of the combination in this cuisine.
3) Presentation: the artful dishes are attractive to anybody !!! That is one of the most famous characteristic in the Peruvian Cuisine. The way the dish is finely decorated makes people to pay attention.
4) Variety: as I mentioned already, there are 600+ dishes in their recipes. But also drinks and liquors that are hundreds of different options available.
All countries cuisine has good dishes but if you want to try something new, I do highly recommend Peruvian food. If you go to a Peruvian restaurant you can ask them what options they have and the list in indefinite. A good restaurant is where a good Ceviche' serving. Check for your local restaurants in town, you will be not disappointed!
So get a Ceviche with a Chicha and your day will be complete.
