Grilled Zucchini And Broschetti With Tomatoes

During the summer heat, you get to have complex vacation ideas. You start planning lovely outdoor weekends, dream about a picnic, grill or an easy indoor dinner along with your friends and family, and all of these it makes it more obvious that summer is knocking at your door.

Today, I will share with you and quick dish that you can serve it, at an outdoor lunch with your friends.

So, we will serve, “Grilled zucchini” with “Bruschetti with tomatoes”. Now, let’s get started and allow the season magic to begin.

For the Grilled zucchini, you will need the following ingredients:

• 800 g zucchini

• 7 tbsp. olive oil

• Salt and pepper

• 200 g light mayo

• 2 tsp. lemon juice

• a pinch of sugar

• 1 tbsp. basil leaves

• 2 garlic cloves

1. We`ll cut the zucchini in long slices, with a 5-7mm thickness each. The olive with be mixed with the salt and pepper in a bowl. Each slice of zucchini will be passed through the olive oil mix and be put on the grill; it should be kept on the grill around 5 min on each side.

2. Now we have to prepare the sauce and for that we’ll mix the mayo with the lemon juice, the sugar, salt and pepper, and at the end we’ll add the chopped basil leaves and store the sauce in the fridge.

3. We are going to crush the garlic cloves, add over it 3 tbsp. olive oil and salt, and we`ll allow them to marinate at the room temperature for a couple of minutes (5 min.). Sprinkle the hot zucchini with the marinate mix and serve it with the basil sauce, that I have shared with you above, and with Broschetti with tomatoes.

For the Broschetti with tomatoes we need the following ingredients:

• one huge garlic

• 3 tsp. olive oil

• Salt and pepper

• 4 slices of ciabatta bread

• 2 tomatoes

• Few basil leaves

1. Cut the pointed part of the garlic, add 1 tsp. olive oil on top of it, wrap it up in an aluminium foil and you’ll put it on the heated grill for 20 – 30 min. (you can do this, while you are making the grilled zucchini).

2. After the garlic is done, cut the bread in slices, sprinkle them with 1 tbsp. olive oil and place the bread on the grill. When you remove them from the grill, rub the bread slices with the garlic and cover them with tomatoes round slices and basil leaves. On top, apply salt, pepper and olive oil according to your taste. The broschetti have to be served immediately.

The preparation of this delicious dish is of 40 min, 1 hour tops.
