Breakfast is the most important meal of the day. One should never skip breakfast. And the most important thing is one should always consume healthy stuff as far as possible. People who skip breakfast are more prone to metabolism, cardiac and weight problems. Some people tend to eat oily stuff just to fill in their tummy and that is just too unhealthy. Breakfast should usually consist of milk, eggs, fruits or freshly prepared fruit or vegetable juices. There are many health freaks who simply rely on healthy diet recipes for their breakfast. However, different people have different kinds of breakfast. Here are some healthy breakfast recipes which are extremely delighting to consume.

Broccoli And Feta Omelet With Toast

Ingredients:

• Cooking spray

• 1 cup chopped broccoli

• 2 large eggs, beaten

• 2 tablespoons feta cheese, crumbled

• 1/4 teaspoon dried dill

• 2 slices rye bread, toasted

Method:

1. Heat a nonstick skillet over medium heat.

2. Coat pan with cooking spray. Add broccoli and cook for about 3 minutes.

3. Combine egg, feta and dill in a small bowl.

4. Add egg mixture to pan. Cook the mixture for 3 to 4 minutes flip omelet and cook 2 minutes or until cooked through.

5. Relishing Broccoli And Feta Omlette With Toast is ready to serve. Enjoy it with a cup of tea, coffee or a smoothie.

Middle Eastern Rice Salad

Ingredients:

• 2 tablespoons olive oil

• 1/2 Vidalia or other sweet onion, thinly sliced (about 3/4 cup)

• 1 (16-ounce) can chickpeas, rinsed and drained

• 1/2 teaspoon ground cumin

• 1/4 teaspoon salt

• Freshly ground black pepper

• 3 cups cooked brown rice

• 1/2 cup chopped pitted dates

• 1/4 cup chopped fresh mint

• 1/4 cup chopped fresh parsley

Method:

1. Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook stirring often, about 5 minutes or until onion begins to brown.

2. Remove from heat and stir in chickpeas, cumin and salt. Season it with freshly ground black pepper.

3. Combine rice, onion-chickpea mixture, dates, mint and parsley in a large bowl.

4. Toss well until thoroughly combined. Tasty Middle Eastern Rice Salad is ready to serve.

Curried Egg Salad Sandwich

Ingredients:

• 2 hard-cooked eggs, chopped

• 2 tablespoons plain Greek-style low-fat yogurt

• 2 tablespoons chopped red bell pepper

• 1/4 teaspoon curry powder

• 1/8 teaspoon salt

• 1/8 teaspoon pepper

• 2 slices rye bread, toasted

• 1/2 cup fresh spinach

• 1 orange

Method:

1. Combine eggs, yogurt, bell pepper, curry powder, salt, and pepper, in a small bowl and stir well.

2. Place spinach on rye bread, top with egg salad and serve this mouth watering sandwich with an orange as an accompaniment.
