Healthy Meals In One Day

Enjoy this Mediterranean day

1 DAY:

Breakfast: 50 gram oat flakes, honey, one banana, two oranges.

Place in a bowl oats, 2 teaspoons of honey and the banana. Squeezed the oranges and serve in a glass with no added sugar, in the case the oranges are too acid add some honey to sweeten it.

Snack: one apple

Lunch: Spaghetti with prawns accompanied by rocket salad.

Recipe for 2 people.

For the sauce= 150 grams cherry tomatoes, 200 grams of prawns, fresh parsley, two gloves of garlic, a pinch of chilli flakes , a glass of white wine, a tablespoon extra-virgin olive oil, salt and pepper.

Chop the garlic and the parsley. Heat the oil in a pan, add the garlic and add the cherry tomatoes previously chopped and remove the seeds. Let cook for 10 min, stirring and adding some of the wine. Then add the prawns, once they start to become pink add the remaining wine and cook for 5 minutes until the wine is evaporated. Add salt and pepper and the chilli flakes.

For the pasta= 200 grams of Spaghetti. Boil the water with added salt and cook the spaghetti for what indicated on the packet.

For the salad= 100 grams rocket salad, balsamic vinegar, two teaspoons extra-virgin olive oil, 50 grams goat cheese, some pine nuts and shaved parmesan.

Wash the salad and place it in a salad bowl, add the oil, the vinegar and the pine nuts. Mix everything and chopped into the mix the goat cheese. Top up with shaved parmesan. Add salt and pepper.

Snack: one prune

Dinner: Panzanella salad.

Recipe for 2 people.

2 big pieces of stale Tuscan Bread , half cucumber, 2 big tomatoes, 7 basil leaves, half red onion, vinegar, olive oil, salt and pepper.

Cut the onion and leave it a bowl with some water and vinegar for a couple of hours. You can also prepare it in the morning. Chop the tomatoes in cubes and remove the seeds. Take the bread and cut the external crust and soak it for few minutes into a small bowl with 2/3 water and 1/3 vinegar. In case you don’t really like vinegar you can soak both onion and bread just with little or no vinegar. Peel the cucumber and cut it into thin slices. Chop the basil leaves.

In a big salad bowl crumble the bread into small pieces and then add the onions, cucumber slices, tomatoes, chopped basil. Season with olive oil, salt and pepper.
