Background:

Feeling lethargic tonight and wanting something quick, easy and tasty and having no energy or inclination to whizz down to the local takeaway, we lay around and discussed the possibility of actually venturing off the sofa and moving in the general direction of the kitchen whilst leisurely sipping a wine. 

What could we make that involved as little effort as possible whilst delivering the most flavor and punch and having hardly any dishes either ?  What about that pasta dish you made last time said he who didn't want to move in any direction !

Why don't you make it then ?  Huh ?  Me ?  I can't make it taste like yours  and so went the conversation.  Yeah, right !

Now, I do actually have my own home made pasta sitting in a tin ready for such an occasion and all I need to do is drag myself off the settee and spend about five minutes making the sauce but do you think I could summon the energy for even this after a full day in the garden. Our Italian friends would be horrified at our quick and easy pasta sauce as they spend some considerable time on their own special recipe but  I still think tinned tomatoes don't do it and that recipe that has been handed down for generations can't compete with our home grown organic heirloom tomatoes.  

Why have tinned when you could have fresh, organic and healthy  all in one tomato and a full of flavor sauce that takes mere minutes to make ?  Is there even any contest ? 

Anyway, I digress and what better place to digress than the kitchen.  Yes, hunger has finally overtake lethargy and starvation has sharpened our tastebuds to near frenzy point now.    This  is  the fastest, yummiest, and scrummy pasta sauce recipe you have ever had the good fortune to come across but be warned, it is addictive and the addiction is not only the pasta sauce recipe but an addiction to fresh, organic and totally moutherwatering tomatoes you will find in any organic garden.    If you absolutely must you can use tinned but if you do you will need to compensate with herbs to add flavor and taste or risk blandness. 

The Recipe for home made pasta sauce in the fast lane, my way !

Be prepared - this is quickfire and  rapid and you will not have time to float off doing other things while you wait for it to cook.   While you are preparing your pasta sauce, put on a large pot of water, bring to the boil and salt it well, toss in your pasta or fettucine or whatever your choose to use. 

Pasta Sauce How to:

Chop up your tomatoes.  Make sure it is enough for the amount of pasta you will be cooking

  (I like to use home grown, organic Heirloom tomatoes as they give extra taste)

Heat your saucepan and add a good size pat of butter and wait until it sizzles slighty and you get that good buttery aroma. Olive oil is fine to use but butter gives it a creamy, and yummy taste and adds to the finished flavor.

Toss in your  chopped  tomatoes and stew gently until soft - mere minutes -   now for the 'secret ingredients'  - add , freshly ground sea salt, freshly ground pepper, one teaspoonful of brown sugar and a good handful of chopped basil at the last minute -  fresh of course - dried basil will just taste mouldy and don't forget to sniff up all those delicious foodie aromas while you stir.   If you were not hungry before you will now be ravenous.  Drain pasta, pour over your home made pasta sauce and top with parmesan shavings.  Add more chopped basil or chopped chives or parsley to serve.

Variations if you more time to spend

Dice onions and chop 2 cloves of garlic and add after the pat of butter, cook until transluscent then continue with the rest of the recipe

Use oregano or chives Instead of the basil,  

Experiment with adding different cheeses.
