How To Cook Paleo Recipes

Hi Everyone!

I hope everyone is enjoying the paleo diet. Have you been trying new recipes and have you seen a change in yourself. Have you figured out how to cook paleo recipes yet? Well if you are still struggling that is O.K. I have a new recipe for you and some tips if you need.

Daves Shepards Pie

2 tbsp oil (olive or Canola)

1 sweet onion, chopped

1 lb bacon, 2 inch diced squares

2 c celery small dice

2 c mixed frozen veg (peas, carrots, corn)

1 lb groung New Zealand Free Range Lamb

½ tsp kosher salt

1 tsp blk pepper

½ tsp paprika

1 tbsp tomato paste

1 c broth (I like beef, but you can use chicken or veg)

2 lg cauliflower heads (you can steam or boil) until soft

2 tbsp oil (use olive for this step)

Preheat oven to 350 degrees

Heat oil in a big saute pan

Cook onion until brown and soft about 15 min.

Then put bacon in the pan with the onion and cook about another 10 min or until brown

Put the celery and the frozen veg in the pan and cook in the fat for until soft

Then add the ground lamb and cook until browned, strain any excess fat

Add the seasonings

Pour the broth and paste in and reduce liquid by about half

Puree cauliflower in a food processor adding the olive oil a little at a time

I recommend the food processor and not a mixer with a paddle, the mixer doesn't

quite get the desired texture we are looking for

Spoon the lamb mix into a baking dish, 9x13 will be perfect

Spoon the cauliflower on top of the lamb

Cook in the oven at 350° about 30 min uncovered

You can feed about 8 people with this recipe

Some pointers:

You can substitute the lamb in this recipe for bison or grass fed beef.

Try to use as big of a pan as possible so that you can caramelize the veg as much as possible for more flavor.

If you boil the cauliflower, make sure that you drain it very well so that any extra moisture in the veg won't water the mixture down.
