As the days grow shorter and the wind gets colder, we bid a hesitant goodbye to summer. It’s not all bad though- both fall and winter have their fair share of bonuses and perks. Just think- there’s the beauty of the changing leaves, followed by snow, which of course means snowball fights and sledding. There’s Halloween, Thanksgiving and Christmas. And there’s food, plenty of it.

While summer is generally a season of light eating, fall and winter get to be the opposite of that, because when it’s freezing out, nothing beats coming home to a hot, hearty and comforting meal. Among the many varieties of comfort food, we tend to love a good beef stew recipe. They’re generally pretty easy to prepare and are incredibly adaptable, which means you can use just about any ingredient you have on hand.

If you’ve never made beef stew, here are a few basics to get you on your way.

What is it?

Beef Stew is a dish characterized by cubes of beef and assorted vegetables served in a thick, meaty broth. It is served in many countries across the world, with the vegetables, proteins and seasonings varying by region.

How do you make it?

Making Beef Stew is easy and fun! Just follow the simple steps below to learn how to make your own:

1. Remove excess fat and cube your beef. Don’t worry about getting all the fat off- just large chunks that may congeal and become unappetizing while cooking. You can cube the beef as small or large as you’d like, but keep in mind that larger pieces will take longer to cook.

2. Add a couple tablespoons of oil to a deep pot or Dutch oven, then begin searing the beef over medium-high heat. Add salt and pepper to the beef and turn the pieces occasionally to make sure each side is heavily seared. Remove the beef from the pan when a thick dark caramelization begins forming in your pot. This glaze is crucial and will be the flavorful base of your stew.

3. Add seasoning vegetables, like onion and garlic and allow them to cook for two minutes, then add chopped vegetables as per choice and cook for another few minutes. Sprinkle a bit of flour into the vegetables, then add your liquid of choice and bring to a boil before reducing the heat and bringing the mixture to a simmer. This important step is where you can customize your stew by adding your favorite combination of vegetables, such as carrots and potatoes, as well as the liquid of your choice, such as chicken or vegetable broth, water or even beer.

4. Once your liquid has reduced slightly, return the beef to the pot and allow to simmer gently for at least one hour, or until the meat is tender. Taste and adjust the seasoning by adding more salt or pepper, then enjoy!

These are the basic steps of any beef stew recipe, and you can certainly play with the ingredients to create your own signature version. No ideas springing to mind? Here’s a terrific recipe variation to get you inspired.
