How To Make Hummus

First of all, I know that one of the requirements of hummus is that it is supposed to contain tahini. However, I do not like tahini, so my recipe does not have any. I got that out of the way, so now I am ready to go.

Start by boiling three cups of water. Place a cup of dried garbanzo beans in a large, sturdy bowl. Pour the water on them and allow them to soak for at least one hour. There is nothing wrong with several hours, or even overnight.

Pour the beans with the soaking liquid into a large pot. Bring this to a boil and add two teaspoons of salt and a teaspoon of tried thyme. This will allow the beans to develop some depth of flavor. Reduce it to a simmer and allow it to cook for one to two hours until the beans are soft.

When the beans are tender, drain them and allow them to become cool. If you want, you can save some of the cooking water for the dip.

Peel and chop two cloves of garlic into large chunks. Place them in the food processor with the beans. Add one fourth of a cup of chopped cilantro and two chopped scallions. Also add a fourth of a teaspoon of pepper flakes and half a teaspoon of cumin. Blend these ingredients until they are roughly chopped. Add a teaspoon of salt and one fourth of a cup of olive oil. Also add the zest and juice of half of a lemon. Blend all of this until it is smooth. If you want, you can add some of the cooking water to make a dip that is a little less heavy.

At this point, taste and decide if it is seasoned appropriately. You can add some more salt or pepper flakes if you want. You can also add some more olive oil. Transfer the hummus to a container.

This would taste good right away. However, I like to allow it to sit so that the flavors can develop. I have found that it tasted even better the second day!

Of course, this tastes good on pita bread. However, it also tastes good on toasted English muffins or on focaccia bread. It works well to have it on sliced crispy vegetables, such as cucumber, carrots and celery.
