How To Make Latke

Latke are typically enjoyed by people who are Jewish while they are celebrating Hanukkah. Though Judaism is not my religion, I had multiple Jewish friends when I was growing up. One of them taught me how to make latke and this was the first food that I learned how to cook. This is a food that I have no problem making just about any time of the year!

The first step is to peel two potatoes. Then shred them and put this in a colander in the sink. Air will make the potatoes get brown. Hold the colander under the faucet to remove the brown. This will also get rid of the excess starch so that the finished latke will be crisper.

Allow the potatoes to sit in the sink for about fifteen minutes. The potatoes will turn red. Again, rinse and drain them. This time, make sure to shake out as much water as possible. Allow the potatoes to sit in the sink for another fifteen minutes so that they can get as dry as possible.

While you wait for the final soak to finish, take a white onion and cut one fourth of a cup into either shreds or a tiny dice. Put these in a medium size bowl. Then crack two eggs and beat them into the onion. Add one teaspoon of salt and one teaspoon of baking powder. The salt will provide a little flavor and the baking powder will make the latke puff a little when they cook. Beat in one fourth of a cup flour. When the potatoes are done, fold those in also.

Take a large plate and put some folded paper towels on top to drain the latke after they fry.

Put some olive oil in a large skillet. Often, people will put oil so it is about an inch thick. However, I have found that one fourth of an inch thick is plenty to get the job done, so this is what I do.

Start by turning the oil to high. When it is hot, dump in about one fourth of a cup of the potato mixture. Flatten it slightly with a spatula. After about two minutes, turn it over and cook the other side. When both sides are golden, remove it and put it on the plate. After I cook the first one, I typically turn the oil down to medium to cook the rest. It will be hot enough.

They are typically eaten with sour cream and applesauce. I do not like sour cream, so I do not use it. However, I like to eat them with apple sauce. The best applesauce to use is a plain, unsweetened version. This will be a little sweet, but mostly, you will taste the amazing flavor from the potatoes and onion that both get cooked until they are golden.
