“Red red” is a superb meal eating by most Ghanaians and it comprises of “gari”(processed from cassava),beans, palm oil, and ripen plantain.
This meal looks very simple but it’s full of nutrients. It is also very easy to prepare and it will taste delicious if you follow the recipe orderly.
Firstly, you can get a cup of beans either the medium or small type of beans for less than 1 Ghana cedis which is equivalent to 1 USD. You then get your palm oil, a bulb of onion, a sachet of iodated salt, a cup of “gari” and at least three fingers ripen plantain. All these will not be more than 5 Ghana cedis if you in Ghana.
Then select through the beans and remove the bad ones from the good. After, you put it in your cooking utensil and pour a sizable amount of water and add a small amount of salt to it. The beans normally take about 45 minutes to finish cooking.
Please, you do well to feel the beans if they are a bit tender to foster easy digestion. Secondly, we then get our palm oil and pour a sizeable amount into your utensil. After, we chop part of our onion into the oil and this will add a nice scent and flavor to the oil after it is heated for about 8 minutes depending on the amount of oil you use.
Thirdly, we get our “gari” which is a ready to eat commodity. It has its own way of processing it in order to arrive at that end product. “gari” can be eaten easily by just adding sugar, water, some groundnuts and some milk if you prefer . That is another snack.
So after we have gotten our boiled beans and heated oil. We come to the preparation of our ripen plantain.
We will first pile the plantain and chop them into slices. We them pour water unto the chopped plantain and add a teaspoon of salt.
This is going to be deep frying so after we pour some of the palm oil into a utensil and put it on fire to heat for about 10 minutes. After the oil has heated for a while we then fetch some of the plantain from the salt water and put it in the heating palm oil.
We will leave it for about 3 minutes and attend to it again to turn the other side of the sliced plantain to be fried also. After about 3 minutes, we remove them and put another set of sliced plantains. We do the same to all the chopped plantain.
Finally, we fetch a least two scoops of ladle of the boiled beans into our plate, add a small amount of the “gari”, then add three scoops of our palm oil which was heated earlier with the chopped onions. Then we stir to mix all contents. After we add some slices of the fried plantains and our “red red” is ready to be served.
We can now enjoy our palatable “red red” (gari and beans or ga’beans) to our satisfaction.
