Make Your Own Pasta And Taste The Difference

Making pasta or noodles is great to make at home. On the social side, good Foodie company can produce lots of experimentation and idea sharing and you can make it gluten free if you wish by using gluten free flours. The hardest part is rolling it out - that's where the pasta machine comes in - it takes all the hard work out of it. If you haven't got one, don't worry, it can be rolled out and cut by hand and it will look more rustic and authentic that way and you can cut it to whatever shape you like.

Ingredients One and a half cups of Flour, 2 Eggs - free range if possible A small amount of water - if required - add this sparingly Herbs of your choice to make it extra tasty - optional

Either make it on a board or in a basin - a basin is probably best for starters Method Sift the flour and make a well in the middle of the flour Add eggs to the well and mix well If you need to add a small amount of water do it now (You may not need to use much water, if any, Knead well and leave to rest in a covered bowl for at least half an hour but one hour is better

Take out and flour the board you will be using Knead lightly on the board again Cut into manageable sizes to put through your pasta machine. Use the widest setting on pasta machine to put the dough through Lightly flour the dough each time you take out of the machine to make it easy to work with and so it won't stick. If it gets too wide fold the dough over Progressively move the pasta settings down to the thinnest. Each time you put it through it is like kneading the dough again and it will become very elastic You should end up with a long piece of silky dough to put through the cutting section of your pasta machine. Here's where the fun part happens and you get to choose the shape you want (you will be able to select different sizes, like pasta, spaghetti, noodle, fettuccine) or cut by hand.

Now your pasta is ready to cook or dry. Cook in plenty of boiling salted water - it should only take a short time - minutes so keep an eye on it until it is what is called al dente - just slightly firm to the bite.

To dry pasta just air dry on a rack - a plastic coated clothes drying rack is ideal or you can get special pasta drying racks. Drape your pasta over the wires or bars and leave until it is completely dry and store in an airtight tin for a superfast meal later. Keep out of the way of playful pets though as they seem to find the drying pasta very fascinating !
