Marinated Braised Beef With Cucumber- Wok Recipe

Beef Marinated With Cucumber 1 Tablespoon vegetable oil (NOT olive oil), 1kg lean beef (1 inch thick steak thickness - leave this in one piece for now), 3/4 cup water (185 ml), 1 cucumber peeled and finely sliced (or use shredded greens or whatever crunchy goodies you have on hand, celery is good or you could use green beans - the important this is to use fresh), Piece of fresh ginger root (size should be as big as your thumb), Fresh coriander leaves to garnish.

Marinade: 4 Tablespoons soy sauce, 2 Tablespoons vegetable oil, 6 coriander roots (use from the ends of your bunch of leaves), 3 tablespoons pepper -freshly ground , 1 tablespoon sugar, Prepare Marinade, Place all the ingredients for the marinade into a blender or use a mortar and pestle to blend into a smooth paste. Do not cut your beef up yet,you will do this later. Coat beef with the paste and marinate for at least 15 minutes - longer is better. Make sure your wok is very hot before you add oil. Take out the beef from the marinade and sear until nicely browned. Add water and braise briefly until medium rare. Remove beef and cover saving the sauce for later. Slice cucumber (or vegetables you have selected) and arrange on a plate. Simmer the sauce saved from the beef and add ginger (OK to use the whole piece or you can chop up - this doesn't matter as you will discard later) Taste to see if you need to adjust anything, you may like to add a bit more soy, sugar or water to taste. Just before you serve, slice the beef and arrange on cucumber and serve with fresh coriander leaves as a garnish.

We have made this with cucumber often but when they are not in season we prefer to choose something fresh from the garden rather than buy a woody and often soft cucumber out of season. Quick, healthy and tasty is the way to go and with a wok recipe you know all the goodness is retained in the food. Wok stir fry dishes taste succulent and moist with crunchy vegetables that have been quickly cooked to keep all the vitamins and minerals of the food in.
