More Ground Beef Dishes From the Frugal Diva

Here are a few more thrifty, family pleasing ground beef meals. You can freeze most of my recipes for dinners at a later time.

When I list salt as an ingredient, I always use sea salt. This is not a requirement but I do believe it is healthier. You can use any type salt you want without affecting the result of the recipe.

Simple Beef Pie

For a lighter version, use low fat sour cream and cream cheese.

1 pound lean ground beef-cooked and drained

1 8 ounce package wide egg noodles-cooked and drained

1 teaspoon garlic powder

1 teaspoon salt

2 8 ounce cans tomato sauce

1 8 ounce container sour cream

1 8 ounce package cream cheese

1 ½ cups shredded Cheddar cheese

Preheat oven to 350 degrees F. In skillet big enough to hold, mix ground beef, garlic powder, salt and tomato sauce. Mix well, cover and simmer on low for 15 minutes.

In small bowl, mix sour cream and cream cheese.

In lightly greased casserole dish, layer in order: cooked noodles, sour cream mixture, ground beef. Repeat for a second layer then sprinkle cheese over top and bake for 20 minutes….yummm!

Easy Peasy Noodle Casserole

This dish is a hit with everyone and they always ask me to bring it for family gatherings. It is so easy to make.

1 pound lean ground beef

1 medium onion-chopped

1 can whole kernel corn-drained

1 can Cream of Mushroom soup

1 can Cream of Chicken soup

1 8 ounce container sour cream

1 small jar pimentos-drained

1 8 ounce bag wide egg noodles-cooked and drained

Buttered bread slices cubed

Preheat oven to 350 degrees F.

Cook ground beef and onions together and drain.

In bowl, combine corn, soups, sour cream and pimentos and mix well. Stir in cooked noodles and pour into lightly greased casserole dish. Place bread cubes on top, buttered side up.

Cook for 30-35 minutes or until bread cubes are browned.

Your recipe collection wouldn’t be complete without a meat and potatoes dinner. We served this on my grandparent’s farm. We loved coming in from the barn on a cold winter day, to the smell of this casserole baking in the oven. Grandma dished it up with a big bowl of home canned green beans on the side.

I still make this today and 2 generations later, it is just as big of a hit as it was when I was growing up.

Easy Layer Dinner

1 pound ground beef – uncooked

2 cups sliced, raw potatoes

1 cup diced onions

1 cup green pepper - chopped

½ cup chopped celery

2 teaspoons salt

½ teaspoon black pepper

2 cans diced tomatoes

Preheat oven to 350 degrees F.

Note: Sprinkle salt and pepper on each layer added.

In lightly greased casserole dish, layer ingredients in this order: potatoes, celery, hamburger, onions, green peppers.

Pour tomatoes over top of layers and bake for 2 hours.
