Quick Chili Recipes With Beef

There are many chili recipes for beef but I find this one is quick and simple to do if you are pushed for time. This chili for beef recipe will serve six people in a short space of time.

Get a large saucepan on to a high heat and put in 2 tablespoons of olive oil.You need about 700g or 1.5 lbs of minced beef. Break this up into a few batches and brown, then remove and set to one side on a plate.

While this is happening roughly chop up one onion and peel and crush 5 cloves of garlic.Turn the heat down, toss in the onion and garlic, cover with a lid and gently fry for around 7-8 minutes. You want them soft but not browned.

When this is happening roughly chop up and deseed 2 peppers of your choice, and 3 red chili peppers. Leave the chili seeds in if you like this hot. (I love it hot)

Now get all of the meat back in to the saucepan and add the peppers and chilis. Then add 2 tins of chopped tomatoes (800g in total), one large tablespoon of tomato puree and flavour with sea salt and black pepper. Get all of that on the boil and then turn down to a simmer.Leave it like this for around 45 minutes.

While this is simmering, drain 400g of kidney beans if you like those in your chili recipe. Get a small dish and add 2 teaspoons of cumin, 2 teaspoons of coriander and 1 teaspoon of brown sugar. After the 45 minutes is up add the beans and the contents of the small dish and simmer and stir in for another 10 minutes and you will have a cracking chilli con carne.

Adjust the flavour to your own liking with salt and pepper. You can serve these with a wrap, french fries or basmati rice. I also serve this with small bowls of sour cream, cheddar cheese and lime wedges for additional flavour.
Don't over complicate this dish. You can easily do without the cumin, coriander and sugar. The secret to doing any recipe quickly is to prepare in advance and have the ingredients at hand and ready to go. All in this takes about an hour and you can serve six people with this quick chili recipe with beef.
