If you’ve been looking for a quick, easy, no-fuss, recipe for rosemary chicken, have I got one for you! This one pan meal takes 15 minutes to prepare and one hour to bake. The blend of rosemary, oregano and garlic creates a heavenly aroma throughout the house as it bakes and the flavor does not disappoint. This is a great weekday meal when you don't have a lot of time or energy to invest in cooking.
If you have an herb garden, this is the perfect way to use some of those fresh herbs. I am in indoor, and outdoor, herb gardener and am always looking for ways to use my fresh herbs. This one uses two, which makes be doubly happy. If fresh herbs are not available, feel free to substitute dried herbs in their place. One tablespoon of fresh herbs is equal to one teaspoon of dried herbs, which is a ratio of one to three. Dried herbs lose their strength after a while, so keep the age of the herbs in mind and apply accordingly. Less herbs if they are new, more if they are old.
Not only is this a recipe for rosemary chicken, but it is also a recipe for baked steak fries. Quartered red potatoes (or any type of pototo you prefer) are roasted in the same pan as the chicken and are coated with the same blend of fresh herbs and spices. These potatoes come out of the oven crispy on the outside and soft on the inside. Both kids and adults love them. Of course, they’re great with ketchup. The best part of these potatoes is that they don’t require a separate pan or baking dish. So, not only is this one pan meal delicious, but clean-up is a breeze.
These are the ingredients you will need to create this recipe for rosemary chicken and steak fries:
- 8 Chicken Thighs (breasts would also work)
- 8 Small Red Potatoes (quartered)
- 1/2 Cup Extra Virgin Olive Oil
- 1 Tbs. Fresh Rosemary (chopped)
- 1-1/2 Tsp. Fresh Oregano (chopped)
- 1-1/2 Tsp. Garlic Powder
- Salt and Pepper
Here are the super easy directions: Put the chicken and potatoes in a bowl. Drizzle olive oil over them and stir until everything is well coated. Place the seasoned chicken and potatoes in a large baking dish. Sprinkle with fresh herbs (oregano and rosemary), garlic powder, and salt and pepper to taste. Bake uncovered in a pre-heated 375 degree oven for one hour. For extra crispness, baste the chicken and potatoes during the last 15 minutes.
