How would you like to prepare a meal at home that rivals the recipes of your favorite restaurant ?
Well I can help you. first off let me give you a little back ground on myself to help you understand Who I am. Like a lot of people my first job was working in restaurant, but unlike most I started cooking at the age of 5. That is when I baked my first cake. My grandmother baked me my birthday cake but I would not eat it because I didn't bake it. So she set me on the counter with the recipe and the ingredients and let me make it and to her surprise it was good. Back to my job in the restaurant the only buffets that happening at that time was salad bar. We had a crab salad recipe that was to die for. So I copied the Recipe and took it home to my mother and she prepared the recipe by the letter and it was terrible to say the least. The next time I made the recipe and it was spot on because I talked to the prep guy and he told me that he used the recipe as a guide and what he did to tweak it. when mom asked what I did I told her I followed the recipe lol. from then on I became a recipe hound.
After the steak house I went to offshore catering ( cooking on oil rigs in the gulf ) I started as the night cook which meant I prepared 2 meals a day midrats & breakfast, also I was in charge of baked goods I made fresh bread daily, recipe after recipe after recipe of cookies cakes pies quick breads all this while I prepared my 2 meals for approx. 75 people per meal lol it was awesome popped the doors in the radio and went to town. It's a good thing I collected recipes, because no-one out there shared their recipes closely guarded secrets. anyway I worked out there long enough to be promoted to Stuart which was cool.
I walked in to a restaurant dressed nicely looking for a job the manager looked at me and said you looking for a manager trainee position and without hesitation I said YEP thats it. (Right place right time)this was a mid level restaurant higher than a steak house lower than Commanders palace. We were made to copy every Recipe they had recipe after recipe they did this so we would Know the recipes bu heart (which was good for me )I did that for a while.
Then joined the Navy (F.T.N )does anyone know what navy stands for well ill tell you Never Again Volunteer Yourself lol unfortunately I didn't go in to food service the darn recruiter talked me in to diesel mechanics did my 4 and got out . When I got out I went back to the earlier restaurant while managing I put my self through culinary school. after school I started working for an up scale restaurant moved arround a little worked at a couple more places upscale as well ohhh and there recipes were out of this world beleave you me I got some of their recipes after all I had to prepare the recipes every day hard not to remember the recipes. I also met a couple of chefs you see on tv nowadays they weren't famous yet they were great people in and out of the kitchen. didn't mean to bore you I just wanted to give you a little background on myself my love of food and recipes.
The other day I was looking for recipes online and I came across this book that said it had "Secrete restaurant recipes" so i had to check it out it was a E-book but they did send me the real book was a little shipping and handling charge but worth it ,any way I compared some of the recipes to the ones I know and they are close taste wise they are the same. they are copycat recipes so there are some differences from the original but the recipes are excellent . The recipes are as good as the originals. Enjoy
